If It’s Yellow…

The colour of an egg yolk is directly influenced by what the hen eats. Hens that are fed a diet rich in carotenoids – natural pigments found in plants like marigolds, corn or alfalfa – produce eggs with orange yolks. These carotenoids include beta-carotene, the same pigment responsible for the bright colours of carrots and sweet potatoes. On the other hand, hens consuming a more standard diet of grains may produce eggs with lighter, yellow yolks.

The nutritional content is more about the hen’s overall diet and living conditions than the yolk colour itself.

While carotenoids can offer benefits, like acting as antioxidants that support eye health and the immune system, the concentration of these in yolks may not be substantial enough to create a major nutritional difference between eggs with orange versus yellow yolks.


Which Is Healthier?

The difference in yolk colour doesn’t significantly affect the overall nutritional profile of the egg. Both orange and yellow yolks generally contain the same amounts of protein, vitamins and fats. The nutrient-rich egg yolk is packed with vitamins A, D, E and K, as well as folate, selenium and choline, which supports brain health.

In terms of health, the colour of the yolk isn’t always a reliable indicator. Research shows that both types of yolks contain similar levels of essential nutrients like omega-3 fatty acids, cholesterol and proteins. The nutritional content is more about the hen’s overall diet and living conditions than the yolk colour itself.

However, free-range or pasture-raised hens, which tend to have access to more varied diets that include grasses and insects, may produce eggs with slightly higher levels of omega-3s and vitamins like D, regardless of whether the yolks are yellow or orange.

Smoky Sweet Potato Salad

Try this Smoky Sweet Potato Salad, using B-well Reduced Oil Mayonnaise, to kick off your flavourful summer!

Serves: 4 | Difficulty: Easy | Prep Time: 10 minutes | Cook Time: 20 minutes

Ingredients

3 large sweet potatoes, peeled and cubed
1 C (250 ml) B-well Reduced Oil Mayonnaise
½ medium-sized lemon, juiced
½ tsp (2.5 ml) cayenne pepper
½ tsp (2.5 ml) smoked paprika
salt and black pepper, to taste

½ red onion, finely chopped
a handful of coriander, chopped (save extra coriander for garnishing)

Method

Bring a large pot of water to a boil, add the sweet potato cubes and cook until soft to the touch. Remove from the stove, drain water and set aside to cool completely.

To make the dressing, add the mayonnaise, lemon juice, cayenne pepper, and smoked paprika into a mixing bowl. Mix to combine; add salt and pepper and mix.

Add the sweet potato to the bowl and gently toss through the dressing to coat it.

Finally, add the red onion and the coriander, and gently mix together until well combined.

Arrange it on a platter or in a salad bowl. Before serving, garnish it with extra coriander.

Since opening in April 2023, SALON has made its mark on the city’s fine-dining scene with an inventive multi-course menu that takes inspiration from Luke’s global culinary career. Originally inspired by Luke’s travels over the past twenty years, the menu has now evolved to emphasise seasonality, incorporating global influences drawn from the flavours and ingredients that inspire Luke – in collaboration with SALON’s executive chef, Carla Schulze – all while maintaining a spirit of constant innovation.

A Gourmet Escape in the Wild

Mhondoro’s culinary offering has been curated by none other than Luke Dale-Roberts, a name synonymous with fine dining in South Africa. Luke, known for his illustrious culinary career (The Test Kitchen, Salon, The Pot Luck Club, The Shortmarket Club, Fledglings), has partnered with Mhondoro to elevate the lodge’s dining experience.

Not only has he designed the new menu, but members of his team from his restaurants in Cape Town and Johannesburg, have been spending time at the lodge alongside him, training the in-house team to offer an extraordinary menu, quite unlike what you’ll find at most safari lodges.

In Luke’s true style, the menu at Mhondoro blends local ingredients with global techniques, creating dishes that are sophisticated yet grounded.

From our first bite at lunch – served at Mhondoro’s new and exclusive reception area (pictured below), at the gates of Welgevonden – it was clear that we were in for something special. This experience in particular is unique to Mhondoro – it allows guests, like us, who have travelled by road from Joburg for three hours, to ease into the safari experience with a relaxed meal, before embarking on the further one-hour drive from the gate to the lodge itself. It was a very welcome start to the experience and one that I think seasoned safari guests, foodies in particular, will fully appreciate.

Elevated Dining

The lodge’s menu has been infused with creativity and flair and, over the course of our stay, we enjoyed meals that were both artfully presented and bursting with flavour, quite different from the typical lodge fare.

Mhondoro will be offering its guests a superlative dining experience, with dishes like beef fillet with Luke’s famous truffle and pepper café au lait sauce (divine), kudu tartare and duck and citrus salad with truffle & port dressing. The menu will continue to evolve and adapt according to seasonality and availability.

…over the course of our stay, we enjoyed meals that were both artfully presented and bursting with flavour, quite different from the typical lodge fare.

I must also make mention of the gorgeous harvest table lunch, featuring tartlets, mini pies, and beautiful salads – made with veggies picked from Mhondoro’s own gardens. This harvest table offering is bound to become a signature lodge favourite.

On our last evening, the lodge’s boma area came alive with a roaring bonfire at the centre, and we gathered to enjoy a traditional South African braai, while the staff sang for us. The highlight for me was the savoury pap tart and a beautifully moist sticky toffee pud for dessert. Enjoying this under the stars made it all the more special.

Big Five High Five

Our two days at Mhondoro were filled with game drives that brought us close to the wild in ways I had only imagined. Guided by the lodge’s experienced head ranger, Jaces, we were fortunate enough to get the ‘Big Five High Five’ – a celebratory high five marking the rare occasion when you see all of the Big Five animals during your stay. How lucky were we?

On our first day, we saw a mother cheetah and her two teenage cubs with a fresh kill, a sight that felt straight out of a National Geographic documentary. We also tracked Nyasa and Shaka, two lions newly released into the reserve. Shaka, true to his name, was regal and powerful, and our trusty ranger spotted him lounging just as the sun had dipped below the horizon.

On our first day, we saw a mother cheetah and her two teenage cubs with a fresh kill, a sight that felt straight out of a National Geographic documentary.

The next morning, as we set out on another game drive, we were treated to a bush tradition – Ranger’s Coffee – a delicious blend of coffee, hot chocolate, and Amarula, which was whipped up effortlessly by Jaces. We enjoyed coffee and snacks while we took in the sunrise over the koppie, and some of us were initiated with our first-ever bush bathroom break! (Note to bush newbies: thinking of coffee ahead of a bumpy game drive? Proceed with caution!).

Mhondoro-Safari-LodgeThe wildlife sightings kept getting better. Giraffes drinking at the watering hole, springboks darting through the grass (the 4-legged kind, not the green and gold kind) and we saw so many rhinos that we began calling ourselves the ‘rhino magnets’. Because Welgevonden is private and inaccessible to poachers, these rhinos live a blissful, unthreatened life, with their beautiful horns intact and no signs of PTSD – as it should be.

We even had the rare opportunity to witness a mother and baby rhino wandering mere meters away from us during a stunning sunset stop. The Mhondoro team had set up a sundowner snack table with ice-cold Cap Classique, which we sipped on while enjoying the perfect golden hour light, marvelling in sheer awe at the experience.

A Close Encounter at The Hide

One of Mhondoro’s most unique features is its 65-meter underground tunnel, leading to an exclusive game-viewing spot called The Hide, which is directly in front of the lodge. The tunnel opens up to a viewing window at a watering hole.
We were lucky enough to spend a few mesmerising moments at dusk, quietly observing a herd of elephants that wandered in, with their gentle yet giant presence and large ears flapping gently as they slurped water just metres away. This level of intimacy with the animals is rare, and it’s one of the many ways that Mhondoro brings guests closer to the heart of Africa.

Adding to the magic, Mhondoro’s saltwater swimming pool is another hotspot for wildlife sightings – elephants frequently wander up to drink from the pool, offering the perfect opportunity for an ‘ellie selfie’ if you’re lucky enough to be in the right place at the right time.

Luxurious Living in the Wild

The lodge itself is a sanctuary of quiet luxury, where attention to detail elevates every experience. Our Executive Suite, a spacious two-bedroom retreat with a private pool overlooking the watering hole, felt like a serene escape within an escape.Each evening, we returned to find the rooms carefully prepared, nets drawn down over the beds (even though this is a malaria-free area), and on one particularly special night, a bath drawn and waiting for us to sink into. Our rooms also each had an outdoor shower in case we wanted to take that connection to the great outdoors even further (admittedly that’s too much nature for this city girl).

The Spirit of Africa

On our last morning game drive, on the way back to the lodge, we were lucky enough to hear a radio call for a sighting of a female leopard. We found her sunning herself on a rock in plain sight, absolutely unperturbed by the desperate attempts to quell oohs and aahs and clicks of cameras. Having just enjoyed freshly flipped pancakes with salted caramel sauce, prepared at a stop mid-way through our morning game drive, it felt like a real gift to have ticked, what must surely be, just about all the ‘bush boxes’ there are to tick.interior-MhondoroThe experience at Mhondoro went beyond its luxurious setting and exceptional service – it’s a place where I truly felt reconnected to the spirit of the land I live in. You can’t help but feel in awe of the raw, unspoiled wilderness and the animals that call it home – it’s a connection that many South Africans, myself included, sometimes take for granted, but one that is revitalised with a visit to a place like this.

The experience lingers long after you’ve returned to city life, leaving you with a deeper appreciation for the wild beauty that defines our country.

Don’t Toss Your Parmesan Rinds! Infuse Extra Flavour

If you’re tossing your Parmesan rinds, you’re wasting that gorgeous chunk of cheese’s full potential. Along with onions, tomatoes and meat, cheese is one of the best sources of umami. Repurpose your Parmesan rinds and make the most of them with these ideas.

To make your rinds last longer, stock them in a bag and load them into the freezer; they can be kept for up to 18 months.

In case you missed it, Parmesan rinds are totally safe to use; it’s even encouraged. Most people assume that the rinds are made of wax, but that hardened exterior is formed early during the process of cheesemaking. The cheese is simply washed with brine, which eventually gets imparted into the cheese. To make your rinds last longer, stock them in a bag and load them into the freezer; they can be kept for up to 18 months.

How To Repurpose Parmesan Rinds

If you’ve never cooked with Parmesan rinds, incorporate them into these dishes to make them richer and more savoury.

Stews & Soups

We didn’t think it possible, but this simple addition will make your Minestrone that much more delicious – the same goes for tomato-based sauces.

Chuck your Parmesan rinds in soups and stews to impart the most incredible umami flavour. This generally works for tomato-based soups, but could be tried in broths and slow-cooked stews. With time, the rinds will slightly melt and impart that savoury, rich flavour. For peak flavour, give your rinds at least 45 minutes to 2 hours to cook with your dish. Once ready to plate up, toss the rinds away – you’ve served them well!

Creamy Risotto

Risotto is our idea of the perfect winter comfort food; it’s right up there with Minestrone soup. Though many consider this dish notoriously difficult to master, making risotto is rather simple. Chicken, fish or vegetable stock is often used to enrich the rice with flavour, but if you want a complete flavour transformation, we highly recommend adding Parmesan to the equation. Halfway through cooking the risotto, add the Parmesan rinds for an even more luscious and creamier result. Before serving, discard the rinds. Everyone will scoop this up, down to the last grain!

Infused Olive Oil

If you’re not a fan of soups and stews (our deepest sympathies), there are other ways you can make the most of those hard chunks of cheese. Place them in a Mason jar and glug some good-quality local extra virgin olive oil to impart a delicious savoury flavour. Drizzle it over salads, bruschetta, or anything your heart desires. Unlock more flavour by placing garlic cloves in the jar along with the rinds and olive oil.

Pastas

There is always the option of simply grating your rinds over pasta dishes and salads. No rule says you can’t. If you need a small amount of Parmesan but you’re not keen on buying an entire wedge for a tiny sprinkling, Parmesan rinds can go a long way in making your pasta more delicious. Of course, if you’re making Cacio e Pepe and need more than a little Parmesan, using the rinds might not be ideal, but it will transform the flavour of a simple yet delish gnocchi. You could also add it to a tomato-based pasta sauce.

Parmesan Stock

Simmer a couple of rinds in water to create a Parmesan stock. Ladle it into sauces and dishes if you want a thinner consistency but don’t want to dull the flavour of the dish. Another fantastic way to use Parmesan rinds is to add them to creamy soups for a velvety texture and delicious flavour.

Cheesy Crusts

Grilled cheese always tastes better with double the cheese. We wouldn’t recommend adding the grated rinds to the interior – go with mozzarella, cheddar or gouda for that irresistible cheese pull situation – but if you want to transform your toastie, grate the Parmesan rinds over the exterior of the buttered bread. When toasted, the cheese crust gives it a delectable crunch and a ridiculously tasty, savoury flavour. Do the same with stuffed chicken or any dish where tomato is highlighted, or just because.

Recipe: Chilli Crisp Fried Egg Rice Bowl

Chilli crisp adds a bold flavour to this dish. Fry your eggs in the fragrant oil and serve them atop a bowl of savoury rice with kimchi.

Nulaid Free Range EggsServes: 2 | Prep time: 20 minutes | Cook time: 30 minutes | Difficulty: easy

Ingredients

4 large Nulaid Free Range Eggs
pinch of salt
splash of vegetable oil
1 spring onion
4 shiitake mushrooms, sliced
2 C (500 ml) cooked jasmine rice
2 Tbsp (30 ml) Soy sauce
2 tsp (10 ml) sesame oil
2 Tbsp (30 ml) chilli crisp condiment oil

To Serve

100 g ready-made kimchi
1 tsp (5 ml) mixed sesame seeds, lightly toasted

Method

Whisk two of the eggs in a small bowl, and add a pinch of salt.

Heat a splash of vegetable oil in a frying pan over medium heat. Pour in the whisked eggs. Allow them to set slightly on the edges, then use a silicone spatula to gently fold the edges inward, creating a fluffy scramble that holds its shape. Once cooked, transfer the eggs to a plate and set aside.

Prepare the spring onion; trim the ends and then thinly slice the white part. Slice the green part on the diagonal and set aside for garnish.

Heat a splash of vegetable oil in a frying pan, add the white part of the spring onion and stir-fry until softened. Add the sliced shiitake mushrooms and cook until browned. Add the cooked jasmine rice and Soy sauce, and stir until combined and heated through. Remove from the heat and stir in the sesame oil and the scrambled egg.

Meanwhile, in another frying pan, heat the chilli crisp oil over medium heat, making sure to scoop out only the oil, leaving the crispy bits behind. Fry the remaining two eggs in the chilli crisp oil, using a spoon to baste the egg whites with the hot oil to crisp them up.

To Serve

Divide the savoury rice between two bowls, add kimchi, and top each with a fried egg. Drizzle with a generous spoonful of the chilli crisp condiment, including the crispy bits, and garnish with the spring onion greens and toasted sesame seeds. Serve immediately.

This November, Mount Nelson, A Belmond Hotel will host the third annual CONFECTIONS x COLLECTIONS (CxC), coinciding with the hotel’s 125th anniversary, showcasing its role as the contemporary cosmopolitan heart of Cape Town. The highly anticipated fashion event spotlights the continent’s most accomplished slow fashion designers, curated by independent fashion and sustainability publication, Twyg, and will transform Mount Nelson’s lounge, terrace, and garden into a stylish setting for salon-style fashion shows. Providing a unique platform for diverse, authentic African perspectives and sartorial storytelling, CxC offers a rare opportunity to engage deeply with the designers’ works in a hotel renowned for hosting iconic fashion figures.

A Destination For the Fashion-Forward

During the five-day CONFECTIONS x COLLECTIONS event, the historic Cape Town venue becomes a hub of contemporary African creativity. Mount Nelson — affectionately called ‘The Nellie’ by locals — is situated a stone’s throw away from leading South African designer studios and boutiques, offering guests easy access to exclusive fashion experiences. Items from the presented CxC collections will be displayed at the AKJP concept store near Kloof Street during the five-day fashion showcase. Access to past and present CxC Cape Town-based designers’ studios — including Lukhanyo Mdingi, Sindiso Khumalo, and VIVIERS Studio — can be pre-arranged.

Taking place from the 5th-9th November 2024, each of the first four days of CxC will feature one designer a day for an intimate fashion experience that sprawls across Mount Nelson’s lavish lounge, terrace, and gardens. This year’s line-up includes two South African designers: LVMH Prize winner and 2023 Amiri Prize winner, Lukhanyo Mdingi, who blends artisanal craft with modernity; and Johannesburg-based designer, RICH MNISI, known for his bold expression of Tsonga culture and craftsmanship. Joining them are Nigerian-based designers: Bubu Ogisi of IAMISIGO, known as a ‘fibre artist’ for wearable art that brings ancient African textile techniques to the fore; and 2023 International Woolmark Prize winner, Adeju Thompson of Lagos Space Programme, who explores the past and future through sartorial expressions of their Yoruba culture.

Previous editions of CxC have included internationally renowned designers, Thebe Magugu and Sindiso Khumalo (both LVMH award winners), and cult favourite, Laduma Ngxokolo of MAXHOSA AFRICA.

A cherished tradition at Mount Nelson, guests will be offered a reimagined Afternoon Tea, elevated by executive sous chef, Vicky Gurovich. In collaboration with the four participating designers, chef Vicky will create bespoke confections that mirror the showcased fashion pieces and complement each designer’s collection. Paired with these confections is a commemorative tea blend, specially created in celebration of the hotel’s 125th anniversary by Mingwei Tsai of Nigiro — a harmonious fusion of local flavours, including rooibos, honeybush, mesquite, and apple, that pays homage to South Africa’s rich botanical heritage. Among the CxC alumni is South African designer and LVMH Prize winner, Sindiso Khumalo, who has designed a Cape Town-inspired tea set for Mount Nelson. This joyful, optimistic, and bold tea set forms part of the hotel’s retail range, which will soon be available to purchase directly from its boutique.

Celebrating 125 years of Mount Nelson, the fifth and final evening of this year’s CxC edition will see a group show that brings together previous and current CxC designers. These participating designers include the aforementioned, as well as VIVIERS Studio, CHULAAP, Wanda Lephoto, MANTSHO by Palesa Mokubung, Sindiso Khumalo, MmusoMaxwell, and MAXHOSA AFRICA.

Guests will be offered a reimagined Afternoon Tea, elevated by executive sous chef, Vicky Gurovich.

Jack Black’s Shoes For Good Initiative Steps Up!

With its ‘Shoes For Good’ initiative in its fourth year, Jack Black’s Brewing Co. is excited to announce that, thanks to popular demand, it’s here to stay as an always-on initiative throughout the year and beyond.

With over 1,200 pairs of shoes collected to date by various running crews, the initiative has now become an always-on effort in collaboration with NGOs in need.

Shoes For Good

Traditionally, this campaign was tied to the build-up of RMB Ultra-Trail Cape Town, where Jack Black collected previously loved shoes in exchange for their signature beer. With over 1,200 pairs of shoes collected to date by various running crews, the initiative has now become an always-on effort in collaboration with NGOs in need.

The Sneaker Shack will be stepping up to play a vital role, ensuring that each pair of donated running shoes is refreshed and ready for their new owners.

The mission remains the same: to collect used and new running shoes to support those in need. Each partner location will be choosing its own NGO to collaborate with to ensure that the support reaches a wide range of communities.

The History of India Pale Ale & The War on Warm Beer

If you love IPA and can’t stand the taste of warm beer, you might have more in common with 18th-century British colonials than you think – minus the bludgeoning and land appropriation, of course. The India Pale Ale, born in England, took the concept of Pale Ale and cranked up the hops to eleven, resulting in a bolder, more hop-forward beer with a higher alcohol content. But there’s more to this craft beer than its characteristic hoppy and citrusy taste. Pour one out as we learn about the history of India Pale Ale…

The Origins of India Pale Ale

During the 18th century, the British Empire ships ruled the waves and dominated global trade routes. British troops stationed in India sought solace under the scorching sun, longing for a taste of home – their beloved English beer. But there was a catch: beer back then didn’t fare well on long sea voyages – it went all fizzy and flat.

In those days, the British East India Company (EIC) held sway over trade and colonisation, connecting the far reaches of the Empire. The EIC’s headquarters in India became a hub of activity, but the weather conditions there posed a challenge for brewing beer. The tropical heat and humidity made traditional brewing difficult, prompting the need for an ingenious solution to quench the thirst of the troops.

Determined to keep their sailors happy, the Brits back home decided to create a beer that could endure the long journey from England to India. The beer of choice at the time was Porter – a dark and robust brew with rich malt flavours. But it fell short at sea, turning flat and lifeless under the tropical sun, and was better suited for colder London weather.


How the Brits Boycotted Warm Beer

The brewers sought to enhance the beer’s resilience. They added extra hops, acting as natural preservatives, to keep the brew fresh and flavourful during the weeks-long voyage. Additionally, they boosted the alcohol content, providing the beer with a sturdier backbone to withstand the choppy waters and emerge victorious on distant shores.

By the time the beer was ready to be shipped to far-off destinations like India, it was the month of October. Hence, it earned the moniker ‘October beer’…

The result of their craftsmanship was ‘pale ale as prepared for India,’ lovingly known as ‘India Pale Ale’ or ‘IPA.’ Interestingly, IPA was first called ‘October beer’ due to its brewing and shipping schedule. In the 18th century, when the beer was first crafted, it was brewed in the early months of the year, particularly in March. The beer was then aged and stored in barrels for several months to allow the flavours to develop and mature.

By the time the beer was ready to be shipped to far-off destinations like India, it was the month of October. Hence, it earned the moniker ‘October beer’ among the brewers and merchants of the time. As the beer gained popularity and became synonymous with the British troops stationed in India, it later became known as ‘India Pale Ale,’ reflecting its connection to the subcontinent. This hop-forward and robust brew became the answer to the troops’ yearning for a taste of home on foreign soil.


The Rise of IPA & Craft Beer

As IPA’s popularity soared, London brewer George Hodgson seized a golden opportunity. In 1822, he cunningly secured a monopoly contract with the EIC, granting him exclusive rights to supply beer to India. This marked a significant turning point in the history of IPA, as Hodgson’s business acumen helped elevate the brew’s status and expand its reach.

According to Statista, the retail dollar value of craft beer in the United States amounted to 28.4 billion U.S. dollars in 2022.

However, across the Atlantic, a hoppy revolution was brewing. In the late 20th and early 21st centuries, America’s craft beer scene took off. Breweries embraced IPA with fervour, experimenting with different hop varieties, brewing techniques and flavour combinations. West Coast IPAs emerged with their bold piney and citrusy notes, while New England IPAs delighted with their hazy appearance and tropical fruit flavours.

The IPA boom in America reinvigorated interest in the classic beer style and inspired brewers worldwide to embrace the trend. It was a rebellion against the bland, mass-produced swill that dominated the beer landscape then. Craft brewers broke free from the corporate clutches, bringing back old brewing techniques and introducing creative new flavours. The movement has increased since, with more people brewing in garages or starting their own craft breweries.

5 Chefs Changing South Africa’s Culinary Scene

In the culinary world, restaurants come, go and come back. The environment is tough, but these chefs are tougher. Their legacies have created a long-lasting impact on the industry, the people who run it and the culture of dining. In honour of Heritage Month, we celebrate some of those luminaries who have put local cuisine on the global map. Here are five South African chefs who are shaping the culinary landscape.

Anwar Abdullatief

Chef Anwar Abdullatief is changing the local culinary landscape, as he brings halaal food into the fine dining space. Based in Salt River at The Spice Yard, the restaurant is growing and has quickly gained popularity. Awarded ‘African Restaurant of The Year’ at the 2024 Luxe Awards and Eat Out Valpré Rising Star Award, chef Anwar combines his love for Cape Malay flavours and African ingredients at his restaurant, The Happy Uncles. Having worked at some of the country’s finest restaurants — including Cavalli, Siba – The Restaurant, Rupert & Rothschild, Clos Malverne, and Jordan — Abdullatief and co-owners, Riedaa Manie and Fuad de Vries, closed their catering business to start the praised establishment.

Since its launch in 2022, The Happy Uncles has provided patrons with a long-awaited concept: halaal-friendly fine-dining cuisine. From malva pudding with ‘melktert’ crémeux, koe’sister crumble, boeber ice cream, mebos jelly and crème anglaise to ‘ou mense onder die kombers’ reimagined, Abdullatief’s menus celebrate Cape Malay cuisine and local flavours, presented creatively and delicately. To entice patrons, The Happy Uncles have various set menus, with the largest having up to eight courses; the menus also change regularly.


Charné Sampson

Chef Charné Sampson has racked up numerous awards in her illustrious career. The talented chef was previously named one of the Cape’s Top Ten Female Chefs in 2021 and her restaurant earned two stars at the 2023 Eat Out Woolworths Restaurant Awards.

As head chef at Epice, and previously pastry chef at La Colombe, chef Charné is well-versed in the world’s spices as she brings them to life in her dishes at the Franschhoek restaurant, based in the Le Quartier Français Hotel. Her menu is inspired by the many flavours of Bo-Kaap and global cuisine; it’s truly a feast for the senses. Mentored by executive chef James Gaag of La Colombe — one of The World’s 50 Best Restaurants — chef Charné Sampson is changing South Africa’s culinary landscape, as she celebrates local flavours and merges her culinary skills with exceptional creativity.


Mmabatho Molefe

Chef Mmabatho Molefe of the renowned Emazulwini celebrates Zulu and Nguni cuisine by paying homage to her fondest childhood food memories, indigenous African ingredients and the concept of nose-to-tail dining.

Honoured by The World’s 50 Best, 50 Next edition, the talented chef was recognised as one of ‘The Young People Shaping the Future of Gastronomy’ in 2022. While the award-winning restaurant — previously situated at Makers Landing, Cape Town — has since closed its doors, the chef continues to shape South Africa’s culinary landscape. Molefe recently collaborated with chef Ryan Cole at Salsify for a ten-course feast and brought back her famous pop-up dining experience, Long Table with Friends. We can’t wait to see what she cooks up next.


Vusi Ndlovu

Chef Vusi Ndlovu ignites taste buds with the flavours of the African diaspora. The owner of MLILO ‘Fires of Africa,’ a restaurant by EDGE Group, Ndlovu highlights the complex flavours of African cuisine. From Ghanaian shito to Senegalese maafe sauce to South African shisanyama, Ndlovu’s appreciation for indigenous ingredients and the primitive yet innovative concept of cooking with fire is brilliantly executed.

Previously crowned ‘Young Chef of Africa and Middle-East’ at the S.Pellegrino Awards in 2018 and awarded ‘Best New Restaurant’ at the Eat Out Awards for Boma on Bree (which he is no longer part of), chef Ndlovu continues to take the local culinary scene by storm with exceptional African cuisine.


Wandile Mabuso

Chef Wandile Mabuso has built a steady reputation in the industry, creating one of the most recognised restaurants in the country. The Soweto-born chef has previously worked at some of the top restaurants in New York and Michelin-starred French restaurants before coming back home to South Africa to open his establishment, Les Créatifs.

Situated in Bryanston, Johannesburg, the renowned restaurant merges fine dining with world-class wines and visual art, and has delighted patrons since 2019. Everyone from world ambassadors to Hollywood’s best have dined at the institution. The menu celebrates local produce combined and French culinary techniques, and features dishes like Midlands beef tongue with madumbe atchar mousse, caramelised onion and impepho-smoked beef jus; and Karoo lamb loin with bulgar wheat, umfino and jus. Chef Wandile won the ‘Culinary Innovation Award’ at the 2024 Luxe Restaurant Awards, and Les Créatifs earned a star at the 2023 Eat Out awards and was given ‘two plates’ by the JHP Gourmet Guide, last year.

Samoosa or Samosa? What’s In a Kerrie Driehoek?

Whether you call them samoosas or samosas (we say the former), you would agree that these pockets of flavour are the ideal savoury snack. From the crispy exterior to the flavourful filling, they are what we look forward to at social gatherings — apart from spending time with loved ones, of course. Traditionally filled with spiced beef mince or curried potato, this delicacy made its way from India to South Africa, where it eventually earned the name ‘driehoek kerriekoek’ or ‘kerrie driehoek,’ aptly named for its triangular shape and curried filling — our people are nothing if not creative.

Adored throughout South Africa, these crispy, golden delights are sold at corner shops, school tuckshops, and the hot food section at most grocery stores. Apart from roadhouses in Athlone, Gatesville and the streets of Bo-Kaap, we think samoosas taste best when homemade, albeit a labour of love — one that requires intricate folds and nimble fingers.

Wagyu Mince Samoosas

As fancy as they come! These Wagyu Mince Samoosas ramp up the flavour, relying on the fat from the mince to add flavour. Seasoned with cumin, garam masala, coriander, onion and chilli powder, the mince filling is fragrant and delicious. A lot can happen in ten years. Rewind a decade, and chef Ivor Jones was captaining the heady days of The Test Kitchen by Luke Dale Roberts, whilst chef Jason Kosmas was deep in the early years of the original Chefs Warehouse and Canteen by Liam Tomlin. A couple of years later, and in a fortuitous turn of fate, the two chefs found themselves swapping roles with Ivor joining Liam to open Chefs Warehouse at Beau Constantia and Jason joining Luke to head up the Pot Luck Club. Today, both chefs are serious culinary personalities in their own right, leading two of the most successful restaurants in Africa.

For two special occasions, these extraordinary chefs will cook Sunday lunch at two spectacular venues… Sunday, 6 October, at the Pot Luck Club Cape Town and Sunday, 20 October, at Chefs Warehouse at Beau Constantia.

The menu on each date will feature eight family-style sharing dishes, with four unique dishes created in collaboration by Ivor and Jason, and two dishes each from the Beau and Pot Luck Club archives, as well as a couple of surprises in between.

Both Sunday lunch experiences will commence with a glass of Beau Constantia Pas du Nom Cap Classique, a duo of signature oysters, a craft bread course, and a cocktail, followed by an eight-course family-style menu. Each guest also takes home a beautiful sweetie box designed by illustrator John Pace and filled with next-level confectionery as a take-away memento of the two special dining occasions.
