Tips for an Outdoor Christmas Celebration

Some of us are lucky, dare we say ‘blessed’, that Christmas falls in the summertime. There’s no snow or bad weather keeping you stuck inside, it’s the perfect time to be outdoors. The sun is shining, and if you’ve got a pool, you can take a dip. An outdoor Christmas is truly a must! We share some tips for hosting the perfect outdoor Christmas celebration.

1. Grill your mains and veggies

Take advantage of your braai! Don’t just grill the meat, grill the vegetables on it too. It will not only have that delicious charry taste, but will also free up some time to prep the sides or make cocktails for your guests. It also means you get to socialise with your guests while you cook outdoors, instead of fussing over the hot oven inside the house.

2. Light it up!

If you’re having a Christmas dinner, lights are essential. They set a tone and mood for the evening, and an outdoor Christmas just wouldn’t be complete without them. The lights you choose can make any gathering feel more special. Use large candles or lanterns as centrepieces; hang a string of fairy/Christmas lights around or above the table to set the ambience. You can even use fairy lights on the table, depending on how big your table is; have fun decorating and arrange them in a crisscross pattern.

3. Prepare your sides at room temperature, if possible

This is especially helpful if you’re having Christmas lunch instead of dinner. It gets pretty hot in December, so you want to avoid the sides wilting in the sun. We know that overindulging and Christmas are synonymous with each other. Make sure that there’s ample room for everyone to sit back and relax after the meal. Make a little space in the corner with a bunch of pillows and blankets, take out the hammock or finally get that comfy outdoor lounge you’ve been thinking about. Point is, you want your guests to be comfortable and it’s not as hard as you think it is.

8. Flowers and Foliage

Flowers always add a lovely decorative element to table settings. Travelling with pets can be a rewarding experience, but it does require careful planning to ensure smooth sailing for both you and your furry friend. Here are some pet travel tips for a stress-free road trip.

Plan Ahead

The key to successful pet travel during the holidays is meticulous planning. Start by researching pet-friendly accommodations. Make reservations well in advance, as many hotels have limited pet-friendly rooms, especially during peak seasons. Check for pet-friendly restaurants and parks at your destination to keep your pet busy.


Visit the Vet

Before hitting the road or taking to the skies, schedule a visit to the veterinarian for a health checkup. Ensure that your pet is up-to-date on vaccinations and ask for a copy of their medical records. If you’re crossing provincial or country borders, be aware of any specific health requirements or quarantine regulations.

The Pot Luck Club Johannesburg finds a new home at The Peech Hotel

Exciting news for Joburg foodies and hungry travellers! The Pot Luck Club Johannesburg by Luke Dale Roberts is moving to The Peech Hotel in the heart of Melrose.

The Pot Luck Club at The Peech Hotel will accept bookings from 16 December 2024 and opens its doors on 28 January 2025.


The Peech Hotel

It’s been twenty years since The Peech Hotel first opened its doors and in the decades later, this multi-award winning boutique hotel has evolved and expanded into a contemporary Johannesburg destination, offering afro-chic luxury across thirty-two rooms and suites set amid two acres of lush indigenous gardens.

In 2019, The Peech Hotel opened its fine-dining restaurant, Basalt, which has played host to a roster of acclaimed chefs over the past five years. However, starting on Tuesday, 28 January 2025, this stylish restaurant space will become the new home for The Pot Luck Club Johannesburg, welcoming both resident guests and Jozi locals for lunch and dinner.

A soft refurbishment of the room will meld the look and feel of the two brands to create a stunning new dining destination in the ‘City of Gold’, while lunchtime service will spill out onto al fresco tables amid the hotel gardens.

“I’ve always been a tremendous admirer of Luke’s food, and his approach as a restaurateur and chef,” says James Peech, owner of The Peech Hotel. “Marking twenty years in business was a turning point for our family-run hotel, and we wanted to continue the evolution of what we have to offer both travellers and locals. We’re thrilled to be partnering with Luke in this next chapter of our growth.”

“We’ve loved every minute of our time in Joburg,” adds Dale Roberts, who opened The Pot Luck Club Johannesburg in Rosebank in May 2023. “This opportunity came at just the right time, the urban energy of The Pot Luck Club is a perfect fit with The Peech, which is just such a sexy, gorgeous hotel. It’s one of my favourite places in Johannesburg, and a real hidden secret in Melrose.”

The final service at The Pot Luck Club in Rosebank will take place on… 14 December, which will also mark the last service at Basalt.

With head chef Ebie du Toit taking care of day-to-day operations and The Pot Luck Club’s group head chef Jason Kosmas working alongside Dale Roberts, diners can look forward to the same much-loved menu of memorable Asian-inspired small plates served in the sophisticated restaurant space at The Peech.

The final service at The Pot Luck Club in Rosebank will take place on Saturday, 14 December, which will also mark the last service at Basalt. The Pot Luck Club at The Peech Hotel will accept bookings from 16 December 2024 and opens its doors on 28 January 2025.

How To Survive a Road Trip With Kids – What To Plan & Pack

School holidays are here and, inevitably, with that comes travelling away somewhere. Anyone with kids knows that that is easier said than done. A road trip with kids can be a wonderful way to spend a vacation, but it can also become tedious and testing for everyone when youngsters are tired and irritable. In order to make your holiday road trip with kids a seamless and happy adventure for all, try planning your vacay with these tips and tricks, all of which come from parents in the know.

PLANNING A ROAD TRIP WITH KIDS

Most of the planning will be done before you leave, and how and what you pack and have at hand will make all the difference.

Probably the two most important things of all are snacks and entertainment. Without these two things, a road trip can become a hazardous experience for everyone, but there are a few other things to consider…

SNACKS FOR A ROAD TRIP WITH KIDS

It goes without saying that snacks are critical, and we’re all for healthy ones where possible. Back in the day, homemade egg mayo or ham and cheese sandwiches – and a wet face cloth to clean up afterwards – were road trip staples. Fortunately, we’ve come a fair way since then, with lots of healthy, pre-packed snacks available for kids and the miracle of disposable wipes. Loads of sugar will make little beings over-energised, and in a confined space, that’s not ideal. Also, sugar means stickiness and no one needs that where it can be avoided.

To make it interesting, pack each kid a mini cooler bag, each with a couple of different things. We’ve found that pretzels, cereal, crackers, dried fruit and nuts are always winners. When it comes to drinks, juice boxes with straws seem like an easy go-to, but can be a hazard – one squeeze and you can have a fountain of sticky apple juice everywhere! We prefer their own water or juice bottles with a sports-style lid that can be opened and sealed back closed. These can also be refilled as you go.

ENTERTAINMENT FOR A ROAD TRIP WITH KIDS

It’s easy to default to watching an iPad, and while this could give you at least 90 minutes to 2 hours of straight peace, the likelihood is that they will eventually get bored with watching a screen. Be sure to pack in some of their favourite toys and books for company as well. If you are travelling with more than one child, it is usually safer to make sure that they each have one of the same thing to avoid drama.

Most kids these days are up to speed with popular music, so a good selection of tunes and a family sing-along can be a great way to pass time for everyone.

KEEPING ORGANISED ON A ROAD TRIP WITH KIDS

Getting to your destination with a car that looks like a dump site inside will probably add a level of undue stress, so organisation (as far as is realistic) is always good. Packing each child a backpack or small storage box of their own things, with the promise of a reward at the end for keeping their own belongings in check.

Keeping a packet/box for trash in an easily accessible place (hung over a headrest) can also help with keeping things tidy. Clearing this out at each pit stop will help keep things in check.

TAKING REGULAR BREAKS ON A ROAD TRIP WITH KIDS

Again, this might seem obvious, but remember that the attention span of kids versus adults are different. Even though you are itching to push through to your destination, letting kids run around a bit and stretch their legs keeps everyone sane.

A lot of rest stops and petrol stations on South African roads have been equipped with play areas for kids for this reason. This is not only for them though, they are also for the sanity of the person driving. Whining and crying little ones can stress a driver out and on a long trip; concentration on the road is key.

Stop, take a break, let the kids play and burn off some energy. Also, toilet breaks… enough said. No one wants to be deep into the Karoo and hear “Mommy, I neeeed the toileeet.”

LEARN SOMETHING NEW

If you have time before you go, prepare your own version of a road trip lucky packet with pre-printed activities, or give your kids each a blank book that can become a travel journal. Kids who are old enough to colour, write and count can be encouraged to learn something along the way about the places they are visiting. Writing down the names of the places they have been to, how far they were from your starting point, what they noticed, etc. One way to make this easier is to pack in a small tray (a new baking tray works well), which can be used on their laps as a surface for colouring or writing.

COMFORT IS KEY

Make sure kids are travelling in comfy, stretchy clothes with shoes that are easy to put on. Taking shoes off when you get back in the car and storing in the door of the car also help when you come to a stop. Having to haul everything out to find them will only cause tension.

Keep a spare set of clothes for each kid in a bag that is separate to your suitcases, and keep it in an easily accessible place. You never know when you may need to change due to an unavoidable spill or mess.

Also, a pillow each and a small blanket each will make having a snooze more pleasant.

A SUMMARY OF RECOMMENDATIONS FOR A HAPPY ROAD TRIP WITH KIDS

  • Pack healthy, tasty snacks, which can be doled out at regular intervals.
  • Use a juice bottle with a sports-style lid that can be refilled to avoid sticky messes and unnecessary and expensive roadside purchases.
  • Pack smart entertainment that is not just digital. Toys, books and a travel journal are all good ideas. Use a small tray to provide a surface to work on.
  • Comfy kids are happy kids. Make sure their clothing is comfy and that they have a pillow and a blanket each for naptime – those will be the golden hours.
  • Take regular breaks and see the trip as part of the holiday, not just a means to an end.

Any good bake starts with quality ingredients. That doesn’t mean that you have to get the most expensive flour or vanilla extract, but when it comes to the main ingredient, that’s where you might want to splurge a little more. In this case, that ingredient is chocolate. Opt for good-quality chocolate, preferably dark or bittersweet, as it provides a more intense chocolate flavour compared to milk chocolate. Cheap chocolate can sometimes lead to bland taste and odd texture – you might want to spare yourself the disappointment.

If you agree, then achieving the perfect balance of ingredients is crucial. Too much flour can lead to a dry, cakey brownie, while too little can result in a flat, overly gooey mess.

The ideal ratio for a gooey centre typically uses a higher ratio of fats (butter) to flour and a careful balance of other ingredients. A common ratio for achieving a gooey centre is around 1:1 or slightly higher for fats to flour. The higher fat content ensures that the brownies remain moist and soft, with a fudgy texture in the middle.


A Crackly Top

If you want the best brownies, then you need a crackly top. It provides a satisfying crunch and a hint of caramelisation, which complements the soft, gooey centre. A crackly top signifies a well-baked brownie, indicating that it has been baked at the right temperature for the optimal amount of time.

For a crackly brownie crust, whip the eggs and sugar until pale and frothy; this will help create air pockets in the batter, leading to the formation of the crackly crust during baking. Additionally, using the right baking pan and oven temperature is crucial. Metal baking pans, especially the aluminium types, are ideal; they distribute heat evenly throughout the batter, allowing for uniform baking and consistent browning.

Whether the butt of the bread loaf or three-day-old brioche, stale bread has provided fresh inspiration for some of the world’s most iconic dishes, from English bread and butter pudding to classic Italian aubergine parmigiana to South African bobotie. While countless examples exist, we’re glad that pain perdu (lost bread) found its place on the list. Here’s all you need to know about the history of French toast.

Through the years, this breakfast dish has earned many monikers, including German toast, Bombay toast and tostées dorées…

French toast is believed to be at least 1500 years old, with its culinary debut dating to 300 A.D., when it was consumed during the ancient Roman Empire. It’s one of those zhushed-up recipes offered on most restaurant menus, but it has humble beginnings.


The History of French Toast

When it comes to stale bread, it’s believed that submerging it in water or milk would spring life back into the bread, making it easier to incorporate or repurpose into certain dishes. While it’s known as ‘pain perdu’ in France, during the 4th or 5th century A.D. Rome, it went by ‘pan dulcis’. Roman chef Apicius called it ‘aliter dulcia’ – translation: another sweet dish. Instead of dunking the bread in a mixture of custard (whisked eggs, milk, sugar, salt, vanilla and cinnamon), it was dipped in milk and then cooked in oil or butter. This is recognised as one of the earlier versions in the history of French toast.

Unsurprisingly, it wasn’t only the French who improvised the Roman version, it was also used in medieval Europe during the Middle Ages. This style is prepared similarly to ‘pan dulcis’, but was known as ‘Poor Knights of Windsor’.

Through the years, this breakfast dish has earned many monikers, including German toast, Bombay toast and tostées dorées (glazed toast), but ‘Poor Knights of Windsor’ is by far the most unique, and the name’s origins are as interesting as the tale. Some say this dish was named after a group of knights who endured financial ruin during the Battle of Crécy in 1346, after having ransomed themselves and being held captive by the French. King Edward III, who reigned at the time, created a pension fund of sorts, The Alms Knights of St. George’s Chapel, which provided shelter and a stipend to 26 ‘poor knights’. In return, these chronically broke blokes and babes had to attend at least four church services a day (hallowed be thy name!) and pray to the king.

The history of French toast might be complex, but the recipe for the medieval European version is rather simple. While the texture is soggier (delightful) and doesn’t have the same crispy edges and golden brown finish one expects from the perfect pain perdu, the wine sauce it’s served with makes up for plenty. The boozy syrup is made by melting butter, sugar and sherry or brandy in a saucepan until the alcohol is dissolved; the fragrant syrup is then drizzled over the eggy bread. If you prefer, more modern versions are served with jam.

Festive Profiteroles filled with Biscoff Crème Pâtissière

Nulaid Free Range EggsPrep Time: 15 minutes | Cook Time: 25 minutes | Makes: 16 | Difficulty: moderate

Biscoff Crème Pâtissière

1 C (250 ml) full cream milk
3 Nulaid Free Range Egg yolks
50 g castor sugar
15 g cornflour
15 g flour
1 tsp (5 ml) vanilla extract
½ C (125 ml) Smooth Lotus Biscoff Spread

Profiteroles

½ C (125 ml) water
60 g butter
½ C (125 ml / 70 g) cake flour
Pinch of salt
2 large Nulaid Free Range Eggs

To Assemble

80 g white chocolate, chopped
3 Lotus Biscoff Biscuits, crumbled
Edible gold dust (optional)

Biscoff Crème Pâtissière

In a saucepan, heat the milk until it begins to simmer.

Meanwhile, whisk the egg yolks, sugar, cornflour, flour, and vanilla together in a mixing bowl until smooth.

Remove the milk from the heat and slowly pour it into the egg mixture, whisking continuously.

Pour the combined mixture back into the saucepan and place over low-medium heat, whisking continuously. Slowly bring it to a boil and allow it to thicken until smooth; avoid rushing this step, the custard needs to cook slowly to prevent curdling.

Strain the custard through a sieve or blend with a stick blender to remove any lumps.

Place the Biscoff spread in a heatproof bowl and microwave for a few seconds to soften (but not melt completely). Stir it into the custard until smooth.

Transfer the pastry cream to a bowl and cover the surface with plastic wrap, pressing it directly against the cream to prevent a skin from forming.

Allow the pastry cream to cool at room temperature, then refrigerate until ready to use. It can be covered and stored in the fridge for up to 4 days.

Profiteroles

Preheat the oven to 200 °C.

In a small, heavy-based saucepan, heat the water and butter together. Slowly bring to a boil, ensuring the butter fully melts before the water begins to boil.

Remove the pan from the heat, then add the flour and salt. Return the mixture to the heat and stir vigorously until it forms a ball and pulls away from the sides of the pan.

Take the saucepan off the heat and let the dough cool for about 5 minutes.

Add the eggs one at a time, beating well after each addition until the dough becomes smooth and firm.

Drop heaped teaspoons or pipe the dough onto a greased baking tray, allowing for space in between as the dough will expand.

Bake for 10 minutes, then reduce the temperature to 180 °C and bake for another 15 minutes. Once done, switch off the oven and leave the pastries inside to cool completely.

To Assemble

The profiteroles can be filled by either slicing open the pastry and filling the centres or by making a hole in the bottom and piping the filling in. If slicing, do so before dipping the tops in white chocolate.

Chop the white chocolate into small pieces to ensure even melting. Place it in a heatproof bowl and microwave in 10-second intervals, stirring between each until fully melted.

Dip each filled profiterole top into the melted white chocolate, sprinkle with cookie crumbs, and add edible gold glitter for a festive sparkle. Allow the chocolate to set fully before filling with the Biscoff crème pâtissière.
