Shaved Fruit Ice – The Summer Dessert We Can’t Get Over!

Last summer, we were obsessed with pan con tomate. This summer, we’re trading savoury for sweet with the viral shaved fruit ice trend. Never heard of it? Imagine if granita and sorbet had a baby and that baby took little effort to make. Whether going tropical with mango or Mediterranean with nectarine, we simply can’t get enough of this treat!

Making this dessert only requires three steps: freeze your fruit of choice, grate the fruit in a bowl, and add your toppings.


The Ultimate Summer Dessert

Inspired by the classic shaved ice, this summer treat is a fantastic dessert to enjoy on sweltering days, especially if you’re craving something sweet yet refreshing. If you haven’t tried it yet, think shaved ice but even better. The beauty of it is that you can make it your own and it’s almost impossible to mess up.

Making this dessert only requires three steps: freeze your fruit of choice, grate the fruit in a bowl, and add your toppings. We love it drizzled with condensed milk or honey; sprinkle with lemon zest or sea salt for a delicious contrast and enjoy! Texture is always great, so if you want, feel free to incorporate fresh fruit, nuts (pistachio, almonds, etc.) and fresh herbs like mint or basil as toppings. Another tip: if you want a finer texture, opt for a microplane instead of a standard box grater for the shaved fruit part.

Shaved fruit ice is similar to bingsu… a popular Korean treat…

Fruits like mango, pineapple, kiwi, strawberry, watermelon, apples and oranges are fantastic. Stone fruits also work well with this trend – try grated frozen peaches, plums and nectarines with a drizzle of honey, topped with fresh basil. For a tropical treat, enjoy grated frozen mango with a touch of condensed milk and top it with fresh mango for a textural delight. You could even add some vanilla ice cream to the mix if you really want to sweeten the deal.


A Sweet Sensation

While the trend has taken social media by storm, it’s not entirely new. Shaved fruit ice is similar to bingsu or bingsoo, a popular Korean treat often enjoyed in other Asian countries.

TikTok and Instagram content creators have made this sweet treat a viral sensation, and while it might be a passing trend in North America, it’s finally summer in the Southern Hemisphere, so we’re taking full advantage of it.

When First Generation cookbook author Frankie Gaw posted his shaved strawberry ice topped with condensed milk, crushed peanuts, black sesame seeds and fresh mint, everyone got hooked. Pass the Plate cookbook author Carolina Gelen was inspired and made her version, Frozen Peaches and Cream. Content creator Eitan Bernath took the shaved fruit ice trend to creative heights with piña colada, strawberry shortcake, pumpkin spice cake affogato versions – he even made a savoury guacamole-style with shaved avo ice!

And if you’re hosting over the holidays, dealing with family stress could make you want to cancel Christmas altogether. While we can’t make your family less dysfunctional, we can offer some tips to help manage your sanity. Here’s how to deal with family drama during Christmas.

1. Host a Family Meeting Ahead Of Time

Consider holding a family meeting before the holiday festivities kick in. This is an opportunity to discuss expectations, potential sources of stress and any concerns openly.

The Magic of Wedgewood

Wedgewood Nougat started in a South African family kitchen in 1999. It is the unlikely success story of mother Gilly Walters, an untrained foodie who created a unique, handmade soft honey nougat and several world-first recipes for concertgoers at her home. These pies have been both adored and detested amongst the people of the world for centuries. Love them or hate them, they have a pretty interesting history, and if you think you don’t like them now, try a mince pie from 400 years ago.

Long Live the Pie!

More obvious than expected, the name is derived from the fact that mince pies actually used to be filled with a stomach-curdling combo of ground meat, suet (visceral cow fat) and the usual suspects found in mince pies today. Pretty grim right?

Back in the 1600s, folks in Europe adopted Middle Eastern food practices, which combined minced meats like beef, mutton or lamb with suet, spices and dried fruit to make these troublesome creations. Back then they were known as ‘shrid pies’ or ‘Christmas pies’.

The common spices were the flavours we know in mince pie today like nutmeg, cinnamon and clove and the dried fruits were much the same with raisins, sultanas, currants, dates, cranberries and orange peel.

Mince Pies

Back then, the pies were not baked into the sugary bite-sized shapes they are today. Rather, they were fashioned into an enormous oblong shaped pastry rumoured to reflect the shape of baby Jesus’ manger.

Also known as ‘coffin’ pie crust, which, with all those funky ingredients, is quite aptly named if you ask us.

Pennies over Pies

In this bizarre culinary period of the 16-, 17- and 1800s, having mince pie at your Christmas party meant that you were fairly important and well-off (who knew mince pies were a sign of wealth, right?). This may seem pretty strange, but this actually has some meaning.

Festive pies in extravagant shapes and sizes were often a sign that you had enough money to hire a dang good pastry chef. The more elaborately sized and decorated your mince pies, the more dough you had in your pocket and your kitchen.

The Modern Pie

Today, we find our mince pies sprinkled with sugar and neatly parcelled in round, easy-to-bite shapes with no funny meat business, and we’re pretty happy with that. Suet, however, is still a relatively common ingredient in many pastries, but who doesn’t like a little bit of fat?

If you’re making your own, they are without doubt best eaten within minutes of coming out of the oven while they’re still warm.

If you have store-bought pies, you can eat those straight out the tray/box, which is probably the most common way to munch them, but even those benefit from a few mins in a hot oven. Alternatively, you can warm them up in the microwave and serve with a dollop of cream (are you drooling yet?).

Be warned though, microwaves are not kind to pastry and you’re better off using the oven.

How to Avoid a Food Coma this Christmas

Each year, my mother and I plan our Christmas lunch menu. It usually starts off with her saying that she doesn’t feel like ‘going all out’, but come Christmas, we’ll have a medieval feast with a turkey leg in one hand and a lamb shank in the other. Then, the trifle makes an appearance, at which point ‘the itis’ ensues. Sure, it’s not every day that we get the chance to sit around the table and feast with friends and family, but having the meat sweats and a bubbly hangover before 3pm isn’t ideal. If you’re looking forward to Christmas lunch but want to avoid the ‘food coma’ that usually follows, these tips might offer you some respite.

What is a Food Coma?
If you have never experienced a food coma, consider yourself lucky. Food comas, or what’s scientifically referred to as ‘postprandial somnolence’, are a common occurrence and are usually caused by overeating or gorging large portions of carbohydrate-rich meals which induces sleepiness, fatigue and bloating.


1. Drink Water


Meat sweats are a thing, and the best way to avoid perspiring like a hog is to drink water. If your Christmas menu is meat-heavy, it’s always a good idea to drink water. Meat contains quite a bit of sodium, causing your fingers and other extremities to swell up. Drinking enough water throughout the day will help flush out excess sodium and alleviate bloating.


2. Don’t Drink (Too Much) Alcohol


Contrary to belief, one more drink might hurt. Just like it’s not recommended to drink alcohol on an empty stomach, drinking alcohol after consuming more than your regular intake can worsen things, especially if you have a lower alcohol tolerance. It can also induce daytime fatigue AKA a ‘food coma’, coupled with dehydration and feeling sluggish.


3. Don’t Starve Till Lunch


Eating on Christmas Day is like doing grocery shopping while hungry – you tend to ‘eat with your eyes’. It’s common for people to skip breakfast on Christmas Day in preparation for the feast, but this approach is counterintuitive. If you’ve ever attended a buffet, you’ll know that it’s actually better to eat something in the morning to stabilise your appetite.

Also, if you skip breakfast, you could feel particularly voracious, which could lead to eating too much too quickly and result in a food coma. Try to regulate your blood sugar. Eating plain yoghurt or a high-energy snack like a banana might help.


4. Smaller Portions, Second Helpings


Christmas only comes around once a year, and it’s not every day that you get to have lunch with your whole family. Don’t be too hard on yourself if you end up eating a little more than you planned. But, it is always better to start off small instead of literally biting off more than you can chew. Try not to overload your plate, you could always go back for seconds.


5. Drink a Cup of Tea

Tea is always a good idea, especially if you want to avoid a food coma. Herbal teas like mint and green tea could help soothe the stomach after overindulging. If you have a spastic colon, it’s best to give yourself some time after your meal, it’s also better to drink lukewarm tea, as ripping hot tea might make it more difficult for you to digest your food.

6. Go for a Walk


Now, we’re not opposed to taking a legendary Christmas nap, but itis-induced naps can be so effective that you might wake up in the new year. Serves: 2 | Prep time: 15 minutes | Cook time: 10 minutes | Difficulty: easy

Peanut Butter Crumble

1 C (250 ml) oats
3 Tbsp (45 ml) brown sugar
¼ C (60 ml) shredded coconut
¼ C (60 ml) desiccated coconut
¼ C (60 ml) unsalted peanuts
3 Tbsp (45 ml) butter, melted
2 Tbsp (30 ml) honey
¼ C (60 ml) smooth peanut butter

Peanut Butter & Berry Chia Smoothie

2 Tbsp (30 ml) chia seeds
½ cup (125 ml) Clover Full Cream Fresh Milk
2 C (500 ml) Clover Smooth Strawberry Flavoured Low Fat Yoghurt
2 frozen bananas
1 C (250 ml) fresh/frozen mixed berries (blackberries, strawberries, raspberries, blueberries)
3 Tbsp (45 ml) smooth peanut butter + extra melted peanut butter, for drizzling (optional)

Peanut Butter Crumble

Preheat the oven or air fryer to 180 ºC. If using the oven, prepare a baking sheet with nonstick spray. For the air fryer, use a paper liner to line the basket. Combine all the dry ingredients in a bowl, then mix in the butter, honey, and peanut butter until fully incorporated.

If using the oven, spread the mixture evenly onto the prepared baking sheet and bake for 10 minutes, stirring every 2 minutes to prevent burning on the edges. If using the air fryer, spread the mixture in an even layer in the lined basket and bake for 6-8 minutes, shaking or stirring every 2 minutes for even cooking.

Once baked, remove the crumble from the oven/air fryer, let it cool completely, then gently break it into clusters. Store in an airtight container for up to one week.

Peanut Butter & Berry Smoothie

To bloom the chia seeds, combine them with the milk in a jar with a lid. Shake the jar every 5 minutes until the seeds have expanded and are evenly dispersed. Tip: do this before you start making the crumble, so that it has time to absorb.

In a blender, combine the Clover Smooth Strawberry Flavoured Low Fat Yoghurt, frozen banana, berries, peanut butter, and soaked chia seeds. Blend until smooth and creamy. Pour into glasses and finish with peanut butter crumble and a drizzle of melted peanut butter on top. Alternatively, serve in breakfast bowls for a filling morning treat.

The Colourful & Layered Origins of Trifle Dessert

For some, Christmas is a religious holiday; for others, it’s about the gifts. For South Africans, it’s a national trifle-eating contest. After Christmas lunch, it’s tradition to visit loved ones and wish them a merry Christmas, but mostly to judge who’s trifle is the best. Although your mother’s trifle will always have your heart and gut, you politely thank ‘aunty Mary’. And on the drive back home, gossip about how it was too sweet, too dry or, my favourite, too boozy.

There’s nothing more nostalgic and festive than trifle. Rainbow colours beautifully layered, from the creamy custard to the sherry-laden sponge cake, wobbly jelly and peach slices. All topped off with a layer of fresh cream and almond flakes.


The Origins of Trifle

Like many traditional dishes and desserts in South African culture, trifle is one that has divided the nation – some think it’s a hodgepodge dessert that resembles dog food. But for those who were raised on Sunday jelly and custard, it’s the trifecta of desserts.

The origins of trifle are more layered than, uhm, trifle. If you’ve ever had the honour of being on trifle duty, you’ll know that the base is a crucial component. Similar to making French toast with day-old brioche, a firm sponge cake is usually best, and prevents the cake from becoming soggy after soaking it in simple syrup or sherry. In fact, it’s believed that this dessert was invented as a creative way to repurpose stale cake.

Trifle is an English dessert and apparently derived from another national dessert, a fool, better known as ‘strawberry fool’, which is similar to Eton Mess.

A fool is a melange of strawberry compote or fresh strawberries and sweetened heavy cream. It was only in 1585 when this dessert became recognised as ‘trifle’. Trifle was first popularised by Thomas Dawson in his cookbook titled The Good Huswifes Jewell, but the original ingredients and method varied greatly. One of the earlier versions from Dawson’s book included whipped cream infused with sugar, ginger as well as rosewater, which resembled more of a fool dessert.

It was only around the 1750s when trifle became a popular dessert. Before then, people used the term ‘trifle’ to refer to a fool dessert. The version of trifle most of us enjoy today can be traced to two cookbooks published in mid-18th century England. These versions used biscuits drenched in wine, topped with a layer of custard and instead of fresh cream they used syllabub, a sweet dish made by curdling milk or sweet cream in wine or cider.

English cookbook author, Hannah Glasse, most credited for her book, The Art of Cookery, was the first to include jelly in trifle. This version was included in another book of Glasse’s, The Compleat Confectioner, published in 1760. In the recipe, jelly is made with calves’ feet. We’re talking about the 18th century, meaning people didn’t have the convenience of purchasing strawberry-flavoured jelly or gelatin powder at grocery stores. Jelly was made the old-school way by cooking down calves’ hooves to produce gelatin, and was used in both sweet and savoury dishes. Because making jelly was such a laborious process, household staff were tasked with making it, ultimately reserving it as a delicacy for the rich.

Another version from The Dean’s Cream, published in Cambridge, England, is closer to the South African version and incorporates sponge cake instead of biscuit. The other ingredients veer from more modern recipes with the inclusion of strawberry jam, macaroon biscuits and ratafia biscuits soaked in sherry.


Traditional Trifle Ingredients

It’s not entirely certain how the dessert came to South Africa, but being a Commonwealth country, it makes sense that this English dessert would become a local fave. Thankfully, today’s version doesn’t require cooking calves’ hooves to make jelly.

Recipes differ from family to family, depending to taste preferences, but trifle usually has at least three to four distinct layers. Some might use lady fingers’ biscuits, Swiss roll or sponge cake as base ingredients, drenched in wine, sherry or simple syrup for those who prefer it without alcohol; topped with custard, fruity jelly and fresh fruit or canned fruits. The final layer is fresh cream, sprinkled with almond flakes, nuts or chocolate shavings. However you make your trifle, I hope it’s not too dry, too sweet or too boozy – unless that’s how you like it.

Edible Butter Olive Oil Candles

These edible butter olive oil candles are a show-stopper for your table, perfect for dipping veggies and breaking bread with friends and family. Each flicker invites guests to savour starters in a truly unique and delicious way.

Ingredients

250 g salted butter
1 head of garlic
1 Tbsp (15 ml) African Gold Extra Virgin Olive Oil + extra to drizzle
A pinch of salt
1 Tbsp (5 ml) fresh herbs (thyme, oregano, basil, or rosemary)
1 x 250 ml paper cup (alternatively, use cling wrap, a ramekin, or a small bowl)
1 food-safe, edible candle wick (organic hemp/beeswax)
Fresh baguette or your favourite bread

Method

Preheat the oven to 200 °C.

Soften the butter at room temperature in a mixing bowl.

Cut off the top of the garlic bulb, place it on a piece of tin foil, drizzle with African Gold Extra Virgin Olive Oil, sprinkle with salt, wrap the garlic bulb with the tin foil, and bake for 45–60 minutes, until soft.

Cool the roasted garlic, then squeeze the cloves into the softened butter.

Mix the African Gold Extra Virgin Olive Oil, salt, and herbs; mix until well combined.

There are a few ways to set your candle:

  • Cut a small hole in the bottom of the paper cup, string the wick through, and fill with the butter mixture, ensuring the wick is centred, then refrigerate until firm.
  • Spoon the butter mix onto a piece of cling wrap, place the wick in the middle, and roll up into a cylinder, secure both ends tightly and refrigerate until firm.
  • Spoon the mixture into your ramekin or bowl, set the wick securely down the middle and refrigerate until firm.

Once set, remove it from the fridge and unmould the candle if using a paper cup. If using cling wrap, remove the candle from the wrapping, slice off one end to flatten, or slice into thick rounds. If using a ramekin or bowl, place it directly on the table or your breadboard.

Trim the wick if it is too long and place the candle on a serving plate.

To serve, light the candle, allow the butter to melt slightly and dip bread for a luxurious, flavourful experience that’s distinctly African Gold.
