With a new year ahead, change is on the horizon, even for one of Stellenbosch’s oldest red wine producers. Alto Wine Estate recently announced that its estate will undergo extensive renovations, but will remain open until further notice.

Alto will temporarily relocate its operations to its sister farm, Bontehoek (formerly Bilton) in early 2025…

This comes ahead of an exciting new chapter, as the estate expands its offering with refurbished interiors; renovations are set to be completed by 2027. During this period, Alto will temporarily relocate its operations to its sister farm, Bontehoek (formerly Bilton) in early 2025, where they will establish a pop-up tasting room and restaurant.


Big Changes, Same Magic

The estate team is enthusiastic about the future plans for its transformation and invites guests to take advantage of this extended opportunity to experience the magic of Alto.

To celebrate the iconic estate before renovations take place, guests can make a reservation via their website.

Visitors can look forward to a curated selection of wine-tasting experiences in the tasting room. The unique offering includes their smoked cheese and wine pairing, biltong and wine pairing and the new summer canapé and wine pairing. All of their tasting options can be accompanied by cheese, charcuterie, antipasto or vineyard platters.

Sample the summer menu at the restaurant; familiar favourites from last season include the grilled Patagonian squid, black mushroom arancini balls and their classic Caesar salad, as well as two new additions to the menu.

Besides the sumptuous summer menu and incredible wine tastings, visitors can experience exciting weekly events at the iconic estate.


Taste & Experience

Couples can enjoy date nights on Wednesday evenings. Indulge in a specially crafted 4-course meal including an amuse-bouche, starter, main course and dessert to share, complemented by a bottle of Alto Rouge 2022 or Cabernet Sauvignon Rosé 2024. This exclusive package is available for just R595.00 per couple. As a special bonus, each couple will also receive a complimentary tasting voucher, valid before the end of 2025.

1. Prep Like a Pro

Take some time on Sundays to prepare meals for the week ahead. Wash and cut fruits and veggies, portion out snacks, and cook items like pasta that can be repurposed for multiple meals. Depending on how big your household is, add a couple of tins of tuna to a creamy bechamel, seasoned with nutmeg, paprika, oregano, salt and garlic, and toss some roughly chopped broccoli or baby spinach to sneak in some veggies and protein. Combine it with your cooked pasta.

Conchiglie is ideal in this creamy pasta bake – it carries the sauce beautifully. Fusilli is also a classic choice for this local favourite. Sprinkle some grated cheddar or gouda over the top and bake until the edges are brown and the dish is bubbling hot.

Crispy Rice and Spicy Tuna

Inspired by the Nobu restaurant favourite, this dish is an easy way to elevate tinned tuna and take it to insanely delicious heights. It’s spicy, crispy and moreish! In the classic version, fresh tuna chunks are used, but tinned tuna works just as well. This midweek marvel is especially great if you have leftover sticky rice.

To make the crispy rice, flatten the cooked sticky rice on parchment paper greased with sesame oil and cut it into small or medium-sized squares. Let it chill in the freezer for 3-4 hours or until solid. Once ready, shallow-fry the rice pieces in a neutral oil. The exterior should be golden brown and super crispy. For the topping, mix the tinned tuna with some mayo, sriracha, grated garlic, sliced spring onion, finely chopped green chilli and a drizzle of sesame oil. Mix until combined and serve on top of the crispy rice ‘cakes’.

Combining warmth and elegance, L’Ami brings together the rich flavours of France and South Africa, with a menu inspired by seasonal, farm-sourced ingredients and the artistry of open-fire cooking. True to its name, ‘friend’ in French,  L’Ami is a celebration of friendship, family and togetherness, paired with La Motte’s exceptional wines. 

Enjoy an à la carte menu for lunch from Wednesday to Saturday or join for dinner on Friday and Saturday evenings. On Sundays, La Motte honours the tradition of gathering around the table with loved ones to share a special meal, prepared with care and connection at heart. A children’s menu is also available.

JAN Franschhoek Season III is currently underway at La Motte Wine Estate. This exceptional food and wine experience presented from a charming historic cottage, the Veepos, right in the middle of the Franschhoek Valley’s most picturesque lavender fields combines the nostalgia of a South African family table with Jan Hendrik van der Westhuizen’s Michelin-star culinary innovation.

Expect regional traditions, familiar flavours and local ingredients transformed to reflect the exciting context of modern global cuisine. Sourced and prepared with the utmost care and consideration, dishes are paired with the estate’s award-winning wines and presented with mesmerising flair.

The estate’s mountainside hiking trail remains a popular activity for those who enjoy the outdoors, while a programme of art, history and culture-inspired events and intimate experiences will be announced shortly.

From curries in a hurry to satisfying salads, here are some of our favourite ways to make the most of a rotisserie chicken.

 Thai Green Chicken Curry

Craving something comforting, but don’t have the time or patience to cook from scratch? Nothing a rotisserie chicken and a bit of curry paste won’t solve. When it comes to curry, we’re really spoiled for choice. While we love Thai red curry as an easy midweek dinner idea, you can also go with canned Thai green curry soup – there are great options on the market, we won’t mention any brands (*clears throat* Woolworths) – with the addition of chicken.

Thai Green Chicken Curry

For green goodness, pan-roast some broccolini – make sure that the stalks retain a bit of crunch and the ends are slightly charred for a smoky flavour. If using curry paste, mix it with coconut cream and add some minced garlic, ginger and a hint of honey/brown sugar to balance the flavours. Allow the curry to simmer for a couple of minutes until the sauce begins to thicken. Divide your chicken into pieces and toss it into the pot along with your veg. Season with salt and pepper to taste and serve with cooked basmati rice. An insanely comforting midweek dinner dish that will be ready in under thirty minutes.

In this heavenly Coconut and Mango Malva Pudding, eggs are replaced with mango pulp and milk with coconut milk. The traditional butter sauce is reinvented with a coconut milk and mango purée, and served with fresh mango slices and vanilla ice cream for a cooling contrast. If that doesn’t bring excitement to the dessert table, nothing will!


Marvellous Mangoes

Whether puréed, sliced, diced, used as a baking ingredient or enjoyed fresh from the orchards, there’s no end to the magic of mangoes! Not only are they high in vitamins A and C, biotin and minerals like potassium but they are also a great source of vitamins B1 and B6. Even better, they’re free from fat, sodium and cholesterol.

In South Africa, homegrown mangoes are available from December until the end of April. The medium to large-sized Tommy Atkins mangoes arrive first, followed by the small, stringless Sensation mangoes, with the medium-to-large Kent and Keitt mangoes rounding off the season. To judge how ripe your mango is, gently squeeze it. Ripe mangoes ‘give’ slightly under your fingers without having to press hard.

Mango Crème Brûlée

Serves: 6 | Prep time: 20 minutes | Cooking time: 25 minutes + cooling

Ingredients

1½ C (375 ml) very ripe mango, peeled and cubed
2 C (500 ml) fresh cream
5 egg yolks
½ Tbsp (7.5 ml) vanilla essence
⅓ C (80 ml) castor sugar + extra for brûléeing
Extra mango slices, for garnishing (optional)
Fresh mint, for garnishing (optional)
Shortbread biscuits, to serve (optional)

You’ll Need

A blowtorch
6 ovenproof flat baking dishes or ramekins

Method

Preheat the oven to 160 °C. Add the cubed mango to a blender and blitz until it forms a smooth purée. Heat the purée in a small saucepan over medium heat, stirring for about 8 minutes or until reduced by half.

Stir the cream into the mango purée and heat just before it reaches a boiling point.

In a bowl, beat the yolks, vanilla and sugar together. Slowly pour the hot mango and cream mixture into the egg mixture, while whisking constantly to prevent the egg from scrambling. Strain through a sieve to remove any lumps. Discard the residue. Divide the smooth mixture evenly between 6 x 125 ml (½ cup) flat baking dishes. (Note: The brûlées can also be baked in traditional deep 125 ml (½ cup) ramekins. Bake for about 25 minutes.)

Place the dishes in a deep baking tray. Load into the oven and carefully fill the tray with boiling water until it comes halfway up the sides of the dishes.

Bake for 15 minutes or until the outsides are just set and the insides are wobbly when given a light shake. Take the dishes out of the tray and cool to room temperature before placing them in the fridge to cool completely. (Note: this dessert can be prepared ahead of time. They can be kept in the fridge for up to 5 days.)

When ready to serve, sprinkle a thin layer of extra sugar on top of each crème brûlée. Use a blowtorch to caramelise the sugar. If using, garnish the brûlées with mango roses by using a peeler to create ribbons. Finish with fresh mint leaves. Serve with shortbread.


Cheat’s Mango & Granadilla Cheesecake

Serves: 12 | Prep time: 25 minutes | Cooking time: 10 minutes + cooling 

Ingredients

1 packet (200 g) Tennis Biscuits
80 g butter, melted
1 Tbsp (15 ml) golden syrup (optional)
1 L tub (4 C) double cream granadilla & mango yoghurt
1 tin (385 g) condensed milk
1 mango, peeled
2 granadillas, cut in half

Method

Blitz the biscuits until they form a fine crumb. Add the butter, and syrup (if using), to the blender and blitz until combined. Transfer the biscuit mixture and press it into the base of a deep 25 cm microwave-safe dish. Use the back of a spoon to evenly distribute the crumbs.

In another bowl, combine the yoghurt and condensed milk. Pour the mixture over the biscuit base. Microwave for about 8 minutes or until almost set. Allow the dessert to cool, then refrigerate it for at least 2 hours.

Cut the cheeks off the peeled mango, close to the pip. Thinly slice each cheek through the width. Pack large slices from the outside followed by smaller slices towards the inside to create a large mango ‘flower’. Spoon some of the fresh granadilla pulp over and serve.


Coconut & Mango Malva Pudding

Serves: 8 | Prep time: 30 minutes | Cooking time: 40 minutes + cooling

For the Pudding

1 C (250 ml) sugar
60 g butter, softened
¼ C (60 ml) mango pulp
½ C (125 ml) desiccated coconut
1 C (250 ml) coconut milk
2 tsp (10 ml) white vinegar
1 tsp (5 ml) vanilla essence
1 C (250 ml) cake flour
1 tsp (5 ml) bicarbonate of soda
A pinch of salt

For the Sauce

60 g butter
½ C (125 ml) sugar
½ C (125 ml) coconut milk
2 Tbsp (30 ml) mango purée
½ tsp (2.5 ml) vanilla or coconut essence
A squeeze of lemon juice, to taste

To Serve

1 mango, peeled
1.8 L tub mango or vanilla ice cream
3 Tbsp (45 ml) coconut shavings, toasted
Mint leaves, to garnish (optional)

Method

For the pudding, preheat oven to 180 °C. Grease a 1.8 L baking dish with non-stick cooking spray. Use a stand mixer to cream the sugar, butter and mango pulp, until pale. Add the desiccated coconut and mix until well incorporated.

In a separate bowl, combine the coconut milk, vinegar and vanilla essence. In another bowl, sift the dry ingredients (flour, bicarbonate of soda and salt). Stir the milk and flour mixtures together and then add the mango mixture. Pour the batter into the greased baking dish and bake for about 35 minutes or until a testing skewer comes out clean.

Start the sauce just before the pudding is done baking. In a saucepan, heat the butter, sugar and coconut milk on medium-high heat, stirring for about 5 minutes until the sugar dissolves. Bring to a boil.

Take off the heat and stir in the mango purée, vanilla/coconut essence and lemon juice. Pour the hot sauce over the pudding as soon as it comes out of the oven. Poke all over with a skewer or a fork for the sauce to soak in. Allow to stand for 20 minutes.

To garnish, use a vegetable peeler to cut the mango into ribbons and top the pudding with the fruit. Serve with ice cream, coconut shavings and mint, if using. (Note: This is an egg-free malva pudding. Mango serves as an egg replacement in this recipe.)

How to Improve your Work-from-Home Life

Working from home has many perks, like not having to spend exorbitant amounts on fuel commuting to work and back home, avoiding sitting in traffic for half of the day, seeing more of your kids/family and wearing sweatpants all day everyday, right? But the downside to this is that the lines between work and home can become blurred since ‘home is work’ and ‘work is home’. It can also be challenging to navigate WFH life when the 9-5 scales get tipped – suddenly, working overtime becomes more frequent and the perpetual myth of work-life balance becomes a malfunctioning seesaw. So, what’s the solution here?

Working from home hardly working?

Since the pandemic, many employers and businesses have decided to make a temporary solution a permanent one. While it can be a convenient arrangement, there are also some challenges to deal with beyond tech malfunctions. Whether you’re a seasoned WFH profesh or just started a remote position, it’s necessary to find your groove and identify what works for you – with a few simple changes your work-from-home life could improve.

Make your workstation work for you

Creating a comfortable workstation is essential. Many people working from home have made-do with what they have available like a dining room table and chair, but long term this isn’t going to help productivity. Something as simple as having an ergonomic chair that supports your back and a desk at the right height could improve your work-from-home environment. If you are able to, create a dedicated area that is solely for work purposes, so that when you are finished for the day, you can walk away and leave it behind you. Set-ups that need to be moved on a daily basis will become tiresome very quickly.

If possible, avoid sitting in your bedroom, this space should be associated with relaxation and invite good energy. The memory foam of your mattress shouldn’t absorb all the stresses and seemingly ‘kind regards’ the work day might bring.

Living at home with others or sharing a workspace with a housemate presents challenges when you have back-to-back meetings or need golden silence to focus. Living alone is more flexible, as you dictate many activities in your day.

Still, for others that are parents or are living with parents, there might be an expectation to do chores around the house during work hours. Communicate your working hours to them and devise a plan; you could try putting up a ‘Do Not Disturb’ sign on your door accompanied by your meeting times to avoid awkward interruptions.


Take regular breaks

Contrary to belief, being planted at your desk for eight hours straight isn’t going to increase your productivity – you’re more likely to just get a stiff back and locked knees in the process. An office environment might involve trips to the water cooler, stepping out for lunch or taking a stroll to your colleague’s desk to inquire about a project, but those who work from home can get tunnel vision while working. Hours could pass by, and before you know it, the work day is almost over.

Try to get up if you can and stretch periodically between meetings. Stretching helps increase blood flow to your brain, even a 3-minute stretch works. Step outside for some fresh air and see what the birds are up to.

Movement is not only crucial for physical health reasons, but also for maintaining mental health. If your job requires you to be creative, a 30-minute to an-hour walk might get those creative juices flowing.

Food for thought

Newsflash – coffee isn’t a meal replacement! Working in an office environment usually means coordinating lunchtimes with colleagues or going to the canteen for a bite, but this isn’t the case when you WFH. One can easily get sucked into work and forget to eat throughout the day, which almost sounds impossible since the fridge is probably near your desk, but it happens! Having a healthy and substantial work lunch is essential to your well-being and productivity. If this is a challenge for you, consider meal-prepping lunches for the week ahead – cook larger portions for dinner and reserve lunch for the following day.

You might also feel the pressure to be online constantly, even during your lunch break, because you’re not physically visible to others as you would be in a normal office environment. If this is the case, communicate that you will be on lunch break if you are not near your computer. Certain work applications even have status settings like ‘lunch break’ or ‘commuting’, which helps communicate things without feeling like you have to rush back to your desk during your break.

Managing your time & productivity

Working from home means having to be more effective at managing your time and projects. If you struggle with time management and often lose track of time click-clacking away at your keyboard, create a schedule for yourself with times allocated to each task. Setting a reminder on your mobile device can also be useful.

Different productivity techniques work for different people; it’s important to try and figure out what works for you. Perhaps play a little music to stimulate your mind and creative thinking – preferably something instrumental without lyrics, as this can be distracting.


Dealing with isolation

Remote working has many benefits, but isolation is one of the downsides. As much as it’s healthy to spend some time alone, the reality is that people need people – even introverted individuals. Make time to call a friend/your mom or take your lunch break someplace other than your desk. If you need a change of scenery, perhaps ask a nearby coworker if they would like to schedule a work session at a coffee shop.

Whether you are a manager or employer, it’s important to confer with your employees about the quality of their working environment. There are bound to be high-stress periods during peak seasons depending on the nature of the business you’re in, but ensure that you are doing your best to create a supportive environment for your staff.

Schedule a check-in with them – ask how they could be better supported in their role, or host a monthly meeting if you live in the same city – in-person conversations are better than talking on screen.


Mental health checks

It’s important that you are able to separate yourself from your job and recognise that although you invest a lot of your time and energy into work, you are not your profession. Create time for your family, friends, pets and yourself; remember to do activities that bring you joy and cater to your personal and mental health needs.

Something as routine as wearing shoes whilst working at your desk might bolster your productivity, as we typically put shoes on when we have things to do or places to go. Having time to reflect on the day and doing a mental check-in before the humdrum of the day begins can help get you geared for work. Give yourself at least two hours before you officially start the work day – factor in the time it would have taken to commute. Whether you spend the time going on a morning walk, reading or meditating is entirely up to you.


Limit your screen time

Working from home also means more screen time, with virtual meetings and remote working. Constantly staring at a screen negatively impacts your eyesight and could induce migraines. Whether mobile or computer-based, excessive screen time also affects your quality of sleep.


Sleep is for the sane

Eight cups of coffee and all the energy drinks in the world aren’t going to make up for lack of sleep. Since working remotely, many have reported having to deal with higher volumes of work. Additionally, work hours could easily bleed into your personal time when working from home. Bear in mind that staying up or working ’til ungodly hours leads to sleep deprivation, which is not only counterproductive, but could also affect your mental health.

The blue light emitted from your screen or hearing your notification dial tone also spikes up your heart rate, making it more difficult to fall asleep. Avoid sabotaging your rest by binge-watching shows – that ‘one more episode’ can wait until the weekend.

Lack of sleep might cause ‘brain fog’, mood swings, or induce headaches – further resulting in decreased productivity levels, not to mention being a grumpy colleague. Know when it’s time to call it a day or night. Remember to establish healthy limitations and prioritise your tasks by creating a realistic schedule and tracking your performance.
