MSC launches the 4th edition of its free Ocean Cookbook

Chefs around the globe have united to support sustainable seafood. The Marine Stewardship Council (MSC), the ocean not-for-profit responsible for the world’s leading sustainable seafood ecolabel, has launched its Ocean Cookbook 2025. The free digital cookbook brings together chefs from all over the world to create a collection of healthy, delicious everyday recipes that tell a sustainability story about the seafood we all love.

Included in the choice of recipes are grilled fish kebabs… and chef Naledi’s popular and light hake tacos and coconut hake dishes.


Good For You & the Ocean

On local shores, our very own chef Naledi Toona has happily stepped into her role as MSC’s campaign ambassador for a third year in a row. The South African rendition of the cookbook features whitefish – that is hake, haddock and Cape Whiting as locally available whitefish alternatives found in South African supermarkets and sourced from the MSC-certified hake trawl fishery.

The Ocean Cookbook also highlights how easy it is to cook nutritious, sustainable and affordable seafood at home.

The South African hake trawl fishery has been certified to the MSC’s Fisheries Standard since 2004 and was the first hake fishery in the world to meet this gold standard for fisheries sustainability.

With the theme, ‘Good for You and the Ocean Too’, the cookbook is the centrepiece of the MSC’s main awareness campaign at the start of the year – traditionally a time for healthy and more environmentally conscious eating. The Ocean Cookbook also highlights how easy it is to cook nutritious, sustainable and affordable seafood at home.

“The ocean is vital to human life on our planet. It feeds billions and supports the livelihoods of millions more. We rely on it for our oxygen intake and climate regulation, and it is home to such wonderful biodiversity. Through simple, everyday choices each of us can help protect the ocean into the future. One such small act is to support sustainable fishing practices by choosing products carrying the blue MSC label when shopping for seafood,” says Louanne Mostert, Marketing and Communications Manager for MSC.


Ocean Cookbook 2025

Included in the choice of recipes are grilled fish kebabs and a mouthwatering fish burger by Swedes, Malin Nordblom and Stina Algulin; a fish potpie to feed the family by Polish chef, Madame Edith; a healthy spin on classic fish and chips by Kati Pohjanmaa, a Finish chef; and chef Naledi’s popular and light hake tacos and coconut hake dishes.

“Cooking has always been an act of love for me and hake is such a versatile, sustainable and quick-to-cook ingredient. My entire family enjoys eating whitefish. I am proud to present the MSC’s Ocean Cookbook for a third year in a row. It conveys a message I resonate with and features recipes ideal as simple suppers, for school lunchboxes and more,” she adds.

To help raise the profile, the cookbook includes stunning photography from internationally renowned food photographer David Loftus, who has worked with Jamie Oliver throughout his career. Happy Chinese New Year! It’s the Year of the Snake

If the year is already off to a shaky start for you, Chinese New Year presents a chance to reset. As luck would have it, 2025 is the Year of the Snake, and despite their sly ways, these cold-blooded creatures also symbolise transformation, growth and healing. Here’s everything you need to know about this year’s Spring Festival.

People born under the Year of the Snake tend to be intelligent, charming, enigmatic, independent, sensitive and even sympathetic.


What Is Spring Festival?

Those who follow the Gregorian calendar celebrate New Year’s Day on the first day of the year, while other cultures use the lunisolar calendar and wait for the return of the new moon, which appears between 21 January and 20 February. This signals the start of the Spring Festival – the spring season begins after the winter solstice draws to a close.

In 2025, Chinese New Year falls on 29 January. Along with firework displays, grand parades, dance performances, costumes and traditional food, each year brings something special.

Each Lunar New Year is represented by one of the Chinese zodiac animals. There are twelve in total – Rat, Ox, Tiger, Rabbit, Dragon, Snake, Horse, Goat, Monkey, Rooster, Dog and Pig – representing a twelve-year cycle. This year marks the Year of the Snake – more specifically, the Wood Snake.

Legend has it that the order of the Chinese lunar calendar is based on a popular race that the Jade Emperor held many moons ago.

Everyone has a Chinese zodiac, which is determined by the year you were born and one of the five elements – wood, fire, earth, metal and water – according to traditional Chinese medicine. The Chinese zodiac, also known as ‘Shengxiao’, translates to ‘born resembling’. Hence, people with the same zodiac might have different personality traits depending on the element associated with them.

Legend has it that the order of the Chinese calendar is based on a popular race that the Jade Emperor held many moons ago. The outcome of this race determined the blueprint for the calendar. To finish the race, the animals had to successfully cross a river. The Jade Emperor assigned a year to each animal, depending on their ranking in the race.

The resourceful Rat was the first to finish – which is why it represents the first year on the Chinese calendar – while the generous Pig came last, as it ate and took naps along the way.


What Does the Year of the Snake Bring?

The Snake zodiac symbolises wisdom; these creatures are also mysterious, intuitive and creative. Snakes are considered to be related to the only mythical animal among the Chinese zodiacs, the Dragon, and are often referred to as the ‘Little Dragon’. They have the power to bring good fortune, despite their seemingly evil nature. As snakes shed dead skin, they make room for transformation, growth and rebirth; they also symbolise fertility.

The last ‘Wood Snake Year’ occurred 60 years ago in 1965 and will especially affect people born then.

Each Chinese zodiac sign experiences each Spring Festival differently. And while one might imagine having the same symbol as the year would bring good luck, it’s considered unfavourable. This phenomenon is described as ‘Ben Ming Nian’. In this event, friends and family are encouraged to share a red-coloured gift or object with the person, as their good luck will transfer. The last ‘Wood Snake Year’ occurred 60 years ago in 1965 and will especially affect people born then.

Previous snake years include 1929, 1941, 1953, 1965, 1977, 1989, 2001 and 2013. People born under the Year of the Snake tend to be intelligent, charming, enigmatic, independent, sensitive and even sympathetic.


It’s a Celebration!

The Year of the Snake begins on 29 January 2025 and lasts for about 15 days. This event is a time for feasting, gift-giving and celebrating ancestors and deities. It’s also an opportunity to rib bad energy and welcome good fortune.

Many traditions are steeped in symbolism. Wearing red, a colour of good luck, is customary. Red envelopes filled with even amounts of money are gifted to loved ones. Odd numbers, however, are considered unlucky. Spring cleaning during festivities is thought to be bad luck, as you could sweep away good fortune.

Traditional foods also play a key role in Lunar New Year celebrations. Mooncakes, made with glutinous rice flour and filled with sweet or savoury fillings, are a favourite treat. Each region has a unique take on these delicacies. Other festive dishes include longevity noodles (one long noodle eaten whole), whole baked fish (symbolising abundance) and sticky rice (representing togetherness).

What Is the Difference Between Gelato & Ice Cream?

Gelato, one of Italy’s many food exports, is beloved all around the world — no surprises there, people love a frozen dessert! But what is the difference between gelato and ice cream? Many gelatarias outside of Italy claim to have the ‘best, most authentic product’, but if you don’t know what that is, how can you tell? Here’s the full scoop on gelato.

When I tasted gelato for the first time I loved it, which came as a surprise, because I don’t usually enjoy dairy-based ice cream – there’s something about the fatty layer it leaves in your mouth that I really don’t enjoy. So, I decided to do a little research and find out why it doesn’t have that fatty element if it’s still dairy-based. Turns out, there are some fundamental differences in the production and storage of this Italian frozen dessert that impact both the taste and mouthfeel of the final product.


Gelato vs. Ice Cream

Dairy & Fat Percentage

Both ice cream and gelato are dairy-based, but ice cream contains more cream than milk, whereas gelato contains more milk than cream – that’s why there is no fatty layer. For ice cream to be considered the real deal, it has to contain at least 10% fat content, but gelato only needs to contain between 5 and 7%. Ice cream also contains eggs, while gelato is eggless, which also affects the fat content and mouthfeel of the final product.

Churn Factor

Both frozen desserts need to be churned to make sure they are creamy, luscious and, most importantly, scoopable. The churning process helps to incorporate air into the dessert, which results in a dense or lighter result. Gelato is churned at a slower speed than ice cream, which means there is less air whipped into the dessert (around 25-30%); ice cream is churned at a faster speed and can contain up to 50% air.

Storage Temperature

Furthermore, both desserts have to be stored correctly to ensure they are served at the right consistency. They are both classified as frozen desserts, but ice cream is served at a colder temperature (-17℃), while gelato is served slightly warmer at -9℃. This means gelato is not entirely frozen when served, making it smooth, creamy and silky.

Trends come and go, but this lot is here to stay! With the new year in full swing, we can’t wait to explore new industry trends and experience the familiar in a fresh way. From duckweed to fonio beer, here are the most predicted food and drink trends for 2025.

Tinned Fish

Butter boards retired so that ‘seacuterie’ could thrive. Tuna has always been popular, but based on global consumer trends, it’s predicted that other tinned varieties will become more sought-after in 2025 – think mackerel, smoked mussels and tinned octopus (if you really want to splurge). Mackerel is especially great for elevated appetisers, while smoked mussels are ideal in canapés and pasta dishes and on crackers. This food trend is not only delicious but convenient if you want to incorporate more fish into your diet in a cost-effective way.

Hydration Solutions

Stanley changed the hydration game for everyone! These high-quality mugs are more than a trendy appliance, they’ve filtered into the way people think about hydration solutions. Consumer trends show that customers want different drinks; the pattern has been consistent with the culture of drinking sparkling water, kombucha and alternative drinks.

As consumers look for ways to be active, they are also seeking drinks that contain more electrolytes and have seemingly healthier properties. Coconut water and, believe it or not, protein-infused water are popular examples. Energy drink brands are also catering to the demand with creative drink infusions and products containing tropical flavours.

Protein Gains

If drinking protein is not your ‘thing’, perhaps eating it is. Last year, plant-based living was a major focus for conscious consumers, and while people are still promoting sustainable eating and incorporating more vegetables and fruits in their diets, they are expanding their fresh produce range and consuming more meat – former vegan and carnivore dieters included. Animal-based protein like ground beef and organ meat (liver, kidney, heart, etc.) are being considered more. Here’s to free-range and grass-fed gains!

The Crunch Factor

Crunchy chickpeas, crispy rice, tanghulu (candied fruit snack), dehydrated fruits – this year, foodies were all about the crunch factor.

Whole Foods predicted this will be another major food trend in 2025, as people incorporate more crispy elements into popular dishes.

Crunchy foods are mostly associated with hydrolysed, hyper-processed snacks, but with advanced kitchen appliances like multifunctional air fryers, which have ‘dehydrating’ settings and more, home cooks are able to add crunchy elements to home-cooked meals and elevate flavours in exciting ways. We fully endorse this food trend!


Global Flavours

With the rise of content creation and food and drink trends flooding social media feeds, people have been more exposed to unique global flavours. Korean cuisine became a major focus thanks to the influence of pop culture – condiments like kimchi and gochujang, and foods like tteokbokki (steamed rice cakes) and bingsu took off last year.

Flavours like Italian nduja, Mexican chamoy and more were also major hits; trend projections predict that consumers will continue to explore unique flavours, as food manufacturers meet the demand. South African retailer Woolworths already has its finger on the pulse with ready-to-eat dishes and products inspired by global and local flavours.


Sustainable Drinks & Packaging

Food brands, wine estates and beer breweries are pushing for sustainable change as they promote natural wines and environmentally friendly packaging. Food manufacturers who haven’t already eradicated plastic packaging altogether are choosing compostable packaging. Traditional wine makers are moving towards using lighter bottle formats, due to the environmental impact of heavy wine bottles. Leading manufacturer Frugalpac recently discussed plans to bring paper bottles to South Africa to make this trend a reality.

Fonio Beer

African indigenous grains have become more popular among people and food manufacturers, as we continue to learn more about their health benefits and positive agricultural impacts. The beer industry is reconsidering traditional brewing methods and grains used, as they turn to more drought-resistant crops.

Fonio, a super-grain indigenous to West Africa, has become sought-after for its drought-resistant properties, making it favourable in beer making. Beer brand Brewgooder partnered with Brooklyn Brewery to produce “the world’s first Fairtrade-certified brewing supply chain for climate-resilient fonio grain,” creating Brewgooder Fonio. The crisp and hoppy Session IPA has been praised for its innovation in brewing and agriculture.
