Can you tell us how far in advance the planning happens for Christmas celebrations at the Table Bay?

Chef Keshan: At the Table Bay our Christmas planning starts mid-year so as to ascertain our themes, operational requirements and what best ingredients will be available during the Christmas period.

How do you decide on the menu?

Chef Keshan: As far as menu planning goes, we meet as a team to decide on what traditional dishes we want to prepare, it wouldn’t be Christmas without the old faithfuls such Turkey, Gammon, Roast Beef and Christmas Trifle. We also include some non-traditional dishes that will suit our guests. We keep it simple, fresh, trendy and family orientated, sourcing local and sustainable produce.
