Don\u2019t worry, kokumi is a pretty recent discovery in the world of food, and scientists have just tapped the surface in uncovering its full potential. Imagine exploring food in a completely different way, well, kokumi apparently has the ability to highlight the bourbon flavour of fish sauce, and if you tried, it could probably make chicken liver taste like foie gras. I know what you\u2019re thinking \u2013 impossible right? But that\u2019s what kokumi does&#8230;<\/p>\n<h3>What is Kokumi?<\/h3>\n<p>Kokumi sounds a lot like <em>umami<\/em> and that\u2019s because they\u2019re both of Japanese origin. <em>Umami<\/em> translates to \u2018<a href=\"https:\/\/test10.co.za\/C\/umami-the-essence-of-deliciousness\/\">essence of deliciousness<\/a>\u2019, while <em>kokumi<\/em> means \u2018rich taste\u2019. He was definitely talking about kokumi; it essentially enriches and enhances what we most love about certain foods.<\/p>\n<blockquote><p>Kokumi highlights existing or masked flavour profiles that our taste receptors might not be able to pick up.<\/p><\/blockquote>\n<p>It&#8217;s literally one giant flavour bomb \u2013 kokumi combines and enhances taste sensations of umami, sweet and salt. In fact, kokumi is said to add &#8216;craveability\u2019, which explains why food is so addictive. Most <a href=\"https:\/\/test10.co.za\/C\/embrace-the-funk-everything-you-need-to-know-about-fermented-foods\/\">fermented foods<\/a> like cheese, braised or slow-cooked meat, garlic, onions and scallops are naturally high in kokumi. Other foods that deliver the taste sensation include high-calcium foods like milk and cheese, as well as foods containing yeast extract.<\/p>\n<hr \/>\n<h3>How Was It Discovered?<\/h3>\n<p>Since Dr. Ikeda\u2019s <a href=\"https:\/\/test10.co.za\/C\/umami-the-essence-of-deliciousness\/\">umami discovery<\/a>, the <a href=\"https:\/\/www.ajinomoto.com\/innovation\/action\/kokumi-substances\" target=\"_blank\" rel=\"noopener\">Ajinomoto Group<\/a> studied dishes containing onion and garlic, often described as having a \u2018different\u2019 flavour profile, which couldn\u2019t be ascribed to umami. Broths and dishes steeped in onion and garlic have a \u2018rich taste\u2019, hence &#8216;kokumi&#8217;.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-90975\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/12\/garlic-1x560-1.jpg\" alt=\"cooking hacks\" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/12\/garlic-1x560-1.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/12\/garlic-1x560-1-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/12\/garlic-1x560-1-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Umami naturally occurs in foods and the flavour can be attributed to glutamate, it\u2019s also available in synthesised form, known as <a href=\"https:\/\/test10.co.za\/C\/the-myth-we-once-believed-msg-is-bad-for-you\/\">MSG<\/a>. Similarly, kokumi sensation is experienced when eating certain ingredients, but is also available as a food additive\/enhancer. The Ajinomoto Group isolated the peptide glutathione from garlic, which is known to impart rich and emboldened flavours, and sold it as yeast extract.<\/p>\n<hr \/>\n<h3>How Does Kokumi Work?<\/h3>\n<p>As mentioned, it&#8217;s more of a taste sensation rather than a specific taste. Since scientists already knew that glutathione was closely associated with calcium taste receptors on the human tongue, they suspected that the glutathione found in kokumi activates calcium receptors, thus explaining the sensation experienced.<\/p>\n<p>The study concluded that kokumi-rich substances amplify the taste of salt and intensifies the perceived sweetness of certain foods tenfold. Kokumi peptides typically present in high-protein foods and are largely experienced with the breakdown of protein bonds.<\/p>\n<blockquote><p>Although kokumi is tasteless as an additive, it has the ability to amplify the sweetness, saltiness and umami of foods.<\/p><\/blockquote>\n<p>Futhermore, scientists deduced that glutamate-rich ingredients and foods containing yeast extract contributed to kokumi sensation. Interestingly, these foods also delivered a sensation described as \u2018mouthfulness\u2019, impacting the continuity of flavours and viscosity.<\/p>\n<h4>Mouthfulness<\/h4>\n<p>We all know that texture transforms flavour. Hardened fat is unpleasant on its own, but if we&#8217;re talking bone marrow, that\u2019s an entirely different story. Stimulated calcium receptors accentuate more prominent flavours, as fat coats the mouth and tongue \u2013 a sensation described as \u2018mouthfulness\u2019.<\/p>\n<h4>Long-lasting Flavour<\/h4>\n<p>Kokumi both intensifies and \u2018stretches\u2019 the flavour of certain foods. Glutathione peptides prolong the stimulation of binding calcium receptors, resulting in a lingering aftertaste. While kokumi is tasteless on its own, it amplifies existing flavours and their continuity.<\/p>\n<h4>Viscosity<\/h4>\n<p>Reducing sauce allows flavours to develop and integrate over time. Nothing new, right?
