This liquid condiment is used to impart umami flavour and consists of fermented fish or krill, where the fish is fermented for two years.<\/p>\n<h4>Hoisin Sauce<\/h4>\n<p>This Cantonese condiment has a thick consistency and is made from fermented soybean, garlic, <a href=\"https:\/\/test10.co.za\/C\/recipe\/chinese-5-spice-beef-burger-with-roasted-garlic-miso-mayo\/\">five-spice<\/a>, chillies, sugar, rice wine vinegar and sesame oil. Hoisin is used as a condiment or glaze and instantly adds umami to veggies in this <a href=\"https:\/\/test10.co.za\/C\/sticky-asian-rice-bowl-with-sweet-and-spicy-hoisin-sauce\/\">Sticky Asian Rice Bowl with Sweet &amp; Spicy Hoisin Sauce<\/a>.<\/p>\n<h4>Mirin<\/h4>\n<p>A sweet and syrupy rice wine used in Japanese cuisine. Mirin sauce has a sweet\/salty\/umami taste and is used to season and glaze dishes like teriyaki, <a href=\"https:\/\/test10.co.za\/C\/recipe\/udon-noodle-and-vegetable-broth\/\">udon noodles<\/a> and <a href=\"https:\/\/test10.co.za\/C\/recipe\/tonkotsu-style-ramen\/\">ramen<\/a>.<\/p>\n<h4>Nam Plah<\/h4>\n<p>This type of condiment is a <a href=\"https:\/\/test10.co.za\/C\/recipe\/whole-baked-thai-style-fish\/\">Thai fish<\/a> sauce of fermented anchovies, palm\/brown sugar, garlic, <a href=\"https:\/\/test10.co.za\/C\/coriander-cancel-why-some-hate-the-taste-of-coriander\/\">coriander<\/a> and lime juice.<\/p>\n<h4>Oyster Sauce<\/h4>\n<p>Oyster sauce is pretty much what it sounds like \u2013 a dark, thick sauce made from oyster extract, sugar, salt and thickened with cornstarch.<\/p>\n<h4>Ponzu Sauce<\/h4>\n<p>Ponzu sauce is a Japanese citrus dipping sauce and has an acidic tang, similar to a vinaigrette. It\u2019s made from a ponzu acidic base of citrus fruits (sudachi, yuzu, kabosu citrus) and vinegar, which is then added to soy sauce, mirin\/sugar and dashi broth. It&#8217;s made from fermented soybean paste, roasted grain (soybeans\/wheat), brine and cooking mould. Soy sauce adds a lovely umami flavour to dishes, like in this <a href=\"https:\/\/test10.co.za\/C\/recipe\/sesame-crusted-yellowtail-ginger-chilli-lime-soy-sauce\/\">Seasame-crusted Yellowtail with Ginger, Chilli and Lime Soy Sauce<\/a>. Chinese soy sauce is brown in colour; lighter soy sauce is thinner and saltier than dark soy sauce, which can have a sweet aftertaste. It&#8217;s great in dishes like <a href=\"https:\/\/test10.co.za\/C\/recipe\/chinese-chicken-noodle-soup-flash-fried-soy-shaoxing-sweetcorn\/\">Chinese Chicken Noodle Soup<\/a>.<\/p>\n<h4>Shoyu Shoya Sauce<\/h4>\n<p>Japanese soy sauce is also made from fermented soybean, wheat, salt and water. Shoyu shoya has a thinner consistency compared to other soy sauces.<\/p>\n<h4>Tamari<\/h4>\n<p>A high-protein condiment, formed as a byproduct of miso (fermented soybean). Japanese Tamari is similar to Chinese soy sauce and are both made from fermented soybean, but tamari contains little to no wheat and therefore works for those following a gluten-free diet. Tamari also has more of a subtle umami flavour compared to soy sauce.<\/p>\n<h4>Teriyaki sauce<\/h4>\n<p>This type of condiment is used as a glaze for protein, usually grilled chicken, as <em>teriyaki<\/em> refers to a style of cooking where proteins are glazed. Teriyaki sauce consists of soy sauce, mirin and sugar.<\/p>\n<h4>Worcestershire<\/h4>\n<p>For those who struggle with the pronunciation of this type of sauce, it\u2019s: \u2018wu-stuh-shuh\u2019. Worcestershire is also a liquid fermented condiment that consists of vinegar, molasses, anchovies, garlic, clove, soy, salt, sugar, tamarind and chilli pepper extract. This sauce is also known for its strong umami flavour.<\/p>\n<hr \/>\n<h3>Umami Pastes<\/h3>\n<p>These pastes completely transform the flavours in sauces and soups.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/harissa-marinated-lamb-loin-chops-grilled-peach-salad\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/01\/Harissa-Lamb-and-Salad-400x600.jpg\" alt=\"add umami\" width=\"400\" height=\"600\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/honey-harissa-glazed-roast-pork-neck-with-tahini-minted-hazelnut-pumpkin-wedges\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2022\/03\/SA_Porkneck_roast_honeyharissa4x6-1.jpeg\" alt=\"add umami to your cooking\" width=\"400\" height=\"600\" \/><\/a><\/div><\/div>\n<h4>Chermoula<\/h4>\n<p>Moroccan chermoula is similar to Mexican adobo and is a spice paste of fresh parsley and coriander, garlic, ginger, chilli, cumin and smoked paprika all blended with lemon juice and olive oil.<\/p>\n<h4>Gochujang<\/h4>\n<p>Gochujang is incorporated in sauces used in <a href=\"https:\/\/test10.co.za\/C\/recipe\/spicy-korean-drumsticks\/\">Korean dishes<\/a>. It\u2019s made using fermented soybean paste, soy sauce, gochugaru (chilli powder) and glutinous rice. This fermented red chilli paste has everything you would want from a sauce \u2014 umami, sweet, savoury and spicy.<\/p>\n<h4>Harissa<\/h4>\n<p>This North African sauce and paste is similar to romesco but consists of roasted red peppers, Baklouti peppers, spices (cumin, <a href=\"https:\/\/test10.co.za\/C\/coriander-cancel-why-some-hate-the-taste-of-coriander\/\">coriander<\/a> seeds, caraway seeds), garlic paste and is blended with olive oil, citrus juice and vinegar. The only difference is that laksa also uses dried shrimp, tamarind paste, cashew nuts and galangal. Spices incorporated include turmeric, cumin, coriander and paprika. The longer the miso ferments, the richer and more umami the flavour. Other cereal grains like rice or barley can also be used to make miso. This type of condiment is often used in soups or as a marinade\/glaze for meats and <a href=\"https:\/\/test10.co.za\/C\/recipe\/miso-butter-charred-onion-potjie\/\">vegetables<\/a>. It\u2019s made from Asian aromatics (red chilli, garlic, ginger), fresh turmeric, shallots, belachan (shrimp paste), candlenuts and lemongrass. Rempah is known as the \u2018mother sauce\u2019 of Southeast Asian cuisine.<\/p>\n<h4>Tahini<\/h4>\n<p>A paste made from toasted and ground sesame seeds; tahini is a key ingredient in <a href=\"https:\/\/test10.co.za\/C\/recipe\/guacamole-cauliflower-hummus\/\">hummus<\/a> and <a href=\"https:\/\/test10.co.za\/C\/recipe\/baba-ganoush-with-sesame-lavash\/\">baba ganoush<\/a>.<\/p>\n<h4>Tamarind<\/h4>\n<p>A type of paste made from tropical tamarind pods, a fruit native to Africa, but also commonly used in Asian and Mexican cuisine. Tamarind paste has a sweet-sour taste and is often incorporated into curries.<\/p>\n<h4>Wasabi<\/h4>\n<p>Also known as \u2018Japanese horseradish\u2019, this type of condiment is made by grating the wasabi root. Alternatively, some people use \u2018imitation wasabi\u2019 by making a paste with wasabi powder, water, vinegar and mustard.
