Unlike brandy, which can be distilled from any type of fruit juice, cognac can only be produced using highly specific white wine grapes \u2014 the Ugni Blanc \u2013 a <a href=\"https:\/\/test10.co.za\/C\/have-you-heard-about-these-lesser-known-wine-varietals\/\">grape varietal<\/a> that grows in the Southwest of France, in the Cognac region.<\/p>\n<p>Since all fine things in life require time, making cognac is a lengthy process, but the reward is in the refined, smooth taste of a cognac like Bisquit &amp; Dubouch\u00e9. As an Appellation d\u2019Origine Contr\u00f4l\u00e9e (a certification of authenticity granted to certain geographical indications for wines), cognac needs to clear a set of rigorous requirements and follow distinct production methods \u2014 from the harvesting to the distillation, to ageing and blending.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2022\/06\/BisquitDubouche_3_4x6.jpg\" \/><\/div><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2021\/06\/bisquit_dubouch_vsop_canister_4x6.jpeg\" \/><\/div><\/div>\n<p>Cognac production is actually a form of art, as no two cognacs are the same. They all feature a unique, distinct taste, which can be attributed to the cutting process.<\/p>\n<hr \/>\n<h3>The Heart of the Cognac<\/h3>\n<p>Cognac is more than a\u00a0<a href=\"https:\/\/test10.co.za\/C\/thats-the-spirit-getting-to-know-alcohol-spirits\/\">spirit<\/a> and the heart of Bisquit &amp; Dubouch\u00e9 Cognac lies in its unique method of distillation. What makes cognac compelling and complex and sets it apart from brandy, is the distillation process. It undergoes not one, but two distillations, to result in a refined and uncompromised taste.<\/p>\n<blockquote><p>With every sip, you can taste the heritage and careful consideration that bleeds into the \u2018heart\u2019 of Bisquit &amp; Dubouch\u00e9.<\/p><\/blockquote>\n<p>The distinct Ugni Blanc grapes from which cognac is distilled, are harvested in late September. The grapes are pressed from the moment they\u2019re harvested to produce a wine that&#8217;s aromatic and acidic enough. The wine is then distilled twice using a Charentais copper pot, known as an \u2018alambic\u2019, as this special apparatus is required to yield higher alcohol concentrations within the distillate.<\/p>\n<blockquote><p>Using Alexandre Bisquit\u2019s original distillation method, Bisquit &amp; Dubouch\u00e9 doesn\u2019t depend on fixed parameters like timing, as most cognac brands do. Instead, they follow distinctive distillation methods influenced by emotion and intuition.<\/p><\/blockquote>\n<p>Distillation is a crucial process, as unfavourable by-products need to be separated from the ethanol. The distillate has different cutting points and the distiller determines how much or how little of each part they want to retain. Being a full bodied drink, it stands to reason that cognac not only has a \u2018heart\u2019, but a \u2018head\u2019 and \u2018tail\u2019 too. The \u2018head\u2019 of cognac forms the first part and the \u2018tail\u2019 is the end part of the distillate.
