Fret not, we\u2019re here to help you with this simple list of sauces. For easy digestion, we\u2019ve arranged all the types of sauces by colour and cuisine.<\/p>\n<h3>Wine Sauces<\/h3>\n<p>Not all classic sauces are <a href=\"https:\/\/test10.co.za\/C\/do-you-know-your-five-mother-sauces\/\">Mother Sauces<\/a>. Here are some wine sauces you should know.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/boeuf-bourguignon\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2015\/05\/Boeuf-Bourguignon_400x600.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/venison-loin-with-bordelaise-sauce\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/09\/Steak-4-x-6.jpg\" \/><\/a><\/div><\/div>\n<h4>Bordelaise<\/h4>\n<p>A classic red wine sauce with bone marrow, butter, shallots and a demi-glace. Think &#8216;Bordeaux&#8217; as in the French wine and you\u2019re good. <a href=\"https:\/\/test10.co.za\/C\/recipe\/venison-loin-with-bordelaise-sauce\/\">Bordelaise sauce<\/a> is infused with herbs and spices tied together with twine, known as a bouquet garni (bouquet of garnish).<\/p>\n<h4>Bourguignon<\/h4>\n<p>Similar to Bordelaise, but the difference is in the type of wine used; Bordelaise uses Bordeaux whereas Bourguignon uses Burgundy wine. Bourguignon is a red wine sauce with onions. Typically used in <a href=\"https:\/\/test10.co.za\/C\/recipe\/boeuf-bourguignon\/\">Boeuf Bourguignon<\/a>.<\/p>\n<h4>Jus<\/h4>\n<p>Au jus, meaning \u2018with juice\u2019, is made from meat stock or residual meat juices and has a thin consistency. There are different types of jus \u2013 red wine jus typically uses full-bodied wines.<\/p>\n<h4>Marchand de Vin<\/h4>\n<p>This red wine sauce translates to \u2018wine merchant\u2019 and is a classic red wine reduction, usually made with Cabernet Sauvignon and is accompanied by steak.<\/p>\n<hr \/>\n<h3>White Sauces<\/h3>\n<p>These sauces may be basic, but we don\u2019t know where we\u2019d be without them.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/chicken-au-poivre\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2014\/08\/chicken-600-x-400.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/smashed-avocado-eggs-benedict\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2021\/07\/Avolands_eggs_benedict_4x6-1.jpg\" \/><\/a><\/div><\/div>\n<h4>A\u00efoli<\/h4>\n<p>This type of sauce is essentially garlicky mayonnaise.<\/p>\n<h4>Alfredo<\/h4>\n<p>Pasta lovers are probably no stranger to Alfredo. It\u2019s rich with butter, heavy cream, and of course, grated Parmigiano Reggiano (Parmesan). Usually paired with fettuccine pasta.<\/p>\n<h4>B\u00e9chamel<\/h4>\n<p>A white sauce made by <a href=\"https:\/\/test10.co.za\/C\/cooking-a-roux-light-blonde-brown-dark\/\">cooking a light roux<\/a> using butter\/oil, flour and milk as the base with nutmeg and salt for seasoning. Normally used in <a href=\"https:\/\/test10.co.za\/C\/recipe\/macaroni-cheese-caramelised-leeks\/\">macaroni &amp; cheese<\/a> and <a href=\"https:\/\/test10.co.za\/C\/recipe\/luxurious-chicken-lasagne-in-a-flash\/\">lasagne<\/a>.<\/p>\n<h4>Hollandaise<\/h4>\n<p><a href=\"https:\/\/test10.co.za\/C\/recipe\/smashed-avocado-eggs-benedict\/\">Eggs benny<\/a> isn\u2019t complete without a velvety Hollandaise. This mother sauce contains similar ingredients (eggs, vinegar, lemon juice, butter) as mayonnaise, but uses butter instead of oil and with different ratios. Think warm, tangy, yellow mayo.<\/p>\n<h4>Mornay<\/h4>\n<p>Basically a fancy name for cheese sauce, with b\u00e9chamel as the base and cheese (Gruy\u00e8re, Emmental, white cheddar or Parmesan) worked in.<\/p>\n<h4>Sauce Au Poivre<\/h4>\n<p>Commonly called peppercorn sauce; it&#8217;s made by crushing whole black peppercorns, then melting them in butter. You then flame Cognac in a separate pan and add it to the peppercorns, along with veal stock and cr\u00e8me fra\u00eeche.\u00a0 This type of sauce is usually served with beef steak, but can also be used for <a href=\"https:\/\/test10.co.za\/C\/recipe\/pork-chops-au-poivre\/\">Pork Chops Au Poivre<\/a> or <a href=\"https:\/\/test10.co.za\/C\/recipe\/chicken-au-poivre\/\">Chicken Au Poivre<\/a>.<\/p>\n<h4>Velout\u00e9<\/h4>\n<p>Velout\u00e9 is a mother sauce and is made by adding a light stock to a white roux.<\/p>\n<hr \/>\n<h3>Green Sauces<\/h3>\n<p>These herby sauces make the perfect topping for meats, or pretty much anything.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/reverse-sear-pork-rib-chops-with-jalapeno-and-green-apple-chimichurri\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2019\/08\/SApork4x6_03-1.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/pulled-beef-tacos-chimichurri-2\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/10\/Pulled-Beef-Tacos-4-x-6.jpg\" \/><\/a><\/div><\/div>\n<h4>Chimichurri<\/h4>\n<p>This Argentinian\/Uruguayan green sauce is made using chopped fresh parsley, oregano, minced garlic, olive oil, (red wine) vinegar and chilli\/chilli flakes. People often confuse it with gremolata, which is a dry version of chimichurri, sans olive oil. <a href=\"https:\/\/test10.co.za\/C\/?s=chimichurri\">Chimichurri<\/a> is similar to salsa verde and is normally served with <a href=\"https:\/\/test10.co.za\/C\/recipe\/reverse-sear-pork-rib-chops-with-jalapeno-and-green-apple-chimichurri\/\">steak<\/a> or <a href=\"https:\/\/test10.co.za\/C\/recipe\/pulled-beef-tacos-chimichurri-2\/\">tacos<\/a> to lift the flavours.<\/p>\n<h4>Salsa Verde<\/h4>\n<p>This green (verde) sauce is used in Mexican cuisine. Salsa verde is made from cooked down tomatillos (ripe green tomatoes), onion and jalape\u00f1os, which are pulsed in a blender along with lime juice, garlic and fresh coriander, with oil as a base ingredient. <a href=\"https:\/\/test10.co.za\/C\/?s=salsa+verde\">Salsa verde<\/a> is a refreshing element used as a dressing for steak and seafood dishes.<\/p>\n<h4>Sauce Verte<\/h4>\n<p>Sauce verte is basically salsa verde, but with a creamy French twist. It&#8217;s made using fresh herbs (parsley, chopped chives, tarragon, dill) and a squeeze of lemon juice mixed with homemade mayonnaise. The classic version of this sauce incorporates fresh spinach. Sauce verte is usually served with seafood and potato dishes.<\/p>\n<h4>Pesto<\/h4>\n<p>You can practically make any fresh herb into <a href=\"https:\/\/test10.co.za\/C\/recipe\/lemon-rocket-pesto\/\">pesto<\/a>, but classic pesto is made using basil, pine nuts, crushed garlic, coarse salt and Parmigiano Reggiano, and is traditionally blended with olive oil using a pestle and mortar.<\/p>\n<h4>Pistou<\/h4>\n<p><a href=\"https:\/\/test10.co.za\/C\/recipe\/cauliflower-couscous-with-pistou\/\">Pistou<\/a> is basically the French version of Italian pesto and contains the same ingredients (basil, hard cheese, garlic, olive oil), just without the addition of pine nuts.<\/p>\n<hr \/>\n<h3>Red Sauces<\/h3>\n<p>Not all red sauces are hot, but most hot sauces are usually red.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-81365\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/11\/harissa1x5.jpg\" alt=\"\" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/11\/harissa1x5.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/11\/harissa1x5-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/11\/harissa1x5-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<h4>Marinara<\/h4>\n<p>Marinara is your typical and classic Italian tomato-based red sauce. It contains onions, garlic and herbs. A good marinara is essential to any <a href=\"https:\/\/test10.co.za\/C\/recipe\/fresh-tomato-marinara-sauce-pasta\/\">fresh tomato sauce pasta<\/a>.<\/p>\n<h4>Mignonette Sauce<\/h4>\n<p>This type of sauce is typically served with fresh oysters and is made using shallots, black pepper, salt and red wine vinegar.<\/p>\n<h4>Romesco<\/h4>\n<p>Is a smoky, blended red sauce of charred\/fire-roasted tomatoes and red peppers, toasted nuts (almonds), bread, fresh parsley, smoked paprika, lemon juice and sherry vinegar. Traditionally, fishermen ate romesco sauce with fish.<\/p>\n<h4>Salsa Roja<\/h4>\n<p>Salsa roja is the red and hotter version of salsa verde. In Mexican cuisine, salsa roja uses red plum tomatoes, white onion, <a href=\"https:\/\/test10.co.za\/C\/guide-different-types-of-chillies\/\">serrano chillies<\/a>, cilantro and garlic.<\/p>\n<hr \/>\n<h3>Brown Sauces<\/h3>\n<p>These brown sauces add depth and flavour to some of your favourite dishes.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/oxtail-in-a-thick-gravy\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/03\/oxtail-in-a-thick-gravy-sauce-4-x-6.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/french-onion-soup\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/08\/French-onion-soup.jpg\" \/><\/a><\/div><\/div>\n<h4>Demi-glace<\/h4>\n<p>Demi-glace is used as the base for some sauces like Bordelaise. Remember \u2018demi-glace\u2019 means half so you\u2019re only using half brown sauce\/stock, whereas the ratio in an Espagnole is 1:1. To make a demi-glace, you&#8217;ll need dark brown reduced sauce, half stock (chicken, beef, vegetable) and half brown sauce (<a href=\"https:\/\/test10.co.za\/C\/do-you-know-your-five-mother-sauces\/\">Espagnole<\/a>).<\/p>\n<h4>Espagnole<\/h4>\n<p>This mother sauce is used as a base in demi-glace and beef stew, or served over meat. Brown stock is the base along with mirepoix (diced vegetables), which is then thickened with a <a href=\"https:\/\/test10.co.za\/C\/cooking-a-roux-light-blonde-brown-dark\/\">brown roux<\/a>. Some versions use tomato pure\u00e9\/paste.<\/p>\n<h4>Gravy<\/h4>\n<p>Who doesn&#8217;t love gravy? This type of sauce is made by reducing beef stock, and thickened with slaked cornflour (mixed with a little bit of water to make a paste). It&#8217;s typically poured over roasted meats and used in <a href=\"https:\/\/test10.co.za\/C\/recipe\/oxtail-in-a-thick-gravy\/\">stews<\/a>.<\/p>\n<h4>Jus Lie<\/h4>\n<p>This type of sauce is similar to a demi-glace. It\u2019s made by thickening meat sauce or brown stock with either cornstarch or arrowroot (a starchy vegetable).<\/p>\n<h4>Lyonnaise<\/h4>\n<p>A <a href=\"https:\/\/test10.co.za\/C\/recipe\/french-onion-soup\/\">French onion sauce<\/a> used for soup, and finishing dishes. It consists of a demi-glace as the base, white wine, vinegar and butter-fried onions.<\/p>\n<h4>Mole<\/h4>\n<p>This type of sauce packs a lot of punchy bold flavours, made from ancho chillies, nuts, black pepper, cumin and cinnamon and rich, dark chocolate. Mole means \u2018sauce\u2019 \u2014 there are different types of moles (Roja, Verde, poblano, etc.) but the one with chocolate (traditionally served over chicken) is the most popular.<\/p>\n<hr \/>\n<h3>Sweet Sauces<\/h3>\n<p>Nothing beats a sweet sauce!<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/vegan-flapjacks-with-whipped-coconut-cream-and-berry-coulis\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/10\/westfalia_-vegan-flapjacks-4x6-1.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/vanilla-creme-brulee-with-a-blackberry-compote-centre\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/09\/Vanilla-Creme-Brulee-4x6.jpg\" \/><\/a><\/div><\/div>\n<h4>Comp\u00f4te<\/h4>\n<p>Fruit sauce, similar to coulis, but <a href=\"https:\/\/test10.co.za\/C\/recipe\/vanilla-creme-brulee-with-a-blackberry-compote-centre\/\">comp\u00f4te<\/a> contains fresh or frozen fruit pieces cooked in a simple syrup.<\/p>\n<h4>Coulis<\/h4>\n<p>This type of sauce is made either with vegetables or fruit, but more frequently appears on dessert menus. Coulis has a thin and smooth consistency. It&#8217;s more refined than pure\u00e9, think <a href=\"https:\/\/test10.co.za\/C\/recipe\/vegan-flapjacks-with-whipped-coconut-cream-and-berry-coulis\/\">Berry Coulis<\/a>.<\/p>\n<p><em>Want more?
