You can throw just about anything into a bowl, give it a mix and call it a salad. We\u2019ve all been unlucky enough to see those \u2018unhealthy salads\u2019 on restaurant menus \u2013 the ones that are basically deconstructed burgers in a bowl. If you ever see something like that, we urge you to get up and leave \u2013 don\u2019t settle for mediocrity.<\/p>\n<p>Making a great salad requires some finesse and a basic knowledge of flavour combinations and texture \u2014 not difficult skills to acquire if you\u2019re up to the challenge. Raw, roasted or grilled vegetables? Creamy dressing or vinaigrette? Croutons or seeds? Chicken or halloumi? The options are endless, but as long as you stick to your three starting points, you should end up with something delicious!<\/p>\n<hr \/>\n<h3>Vegetables<\/h3>\n<p>The starting point to any good salad is a bed of fresh, local veg. How that veg is presented is up to you, here are some options:<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/charred-broccoli-and-baby-gem-salad\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/03\/charred-greens-4x6.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/abalimi-bezekhaya-salad\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/10\/Abalimi-bezekaya-salad-4-x-6.jpg\" \/><\/a><\/div><\/div>\n<p><strong>Greens:<\/strong> A fresh bed of greens is a great place to start when you\u2019re making a salad. They add bulk and crunch and create the perfect backdrop for all your flavours to melt together. Tender leaves like <a href=\"https:\/\/test10.co.za\/C\/recipe\/spinach-baby-gem-and-herb-salad-with-dates-and-cashew-nuts\/\">baby spinach<\/a>, butter lettuce and watercress are good for more delicate salads, while sturdier greens like kale or Swiss chard are a great option if you&#8217;re looking for a bit more heft. Just make sure you massage your kale with olive oil to break down some of the tougher fibres. Rocket and <a href=\"https:\/\/test10.co.za\/C\/radicchio-red-peppers-snoek-bottarga-at-the-kitchen-at-maison\/\">radicchio<\/a> offer bitterness, making them a good option when your dressing is slightly sweeter.<\/p>\n<p><strong>Grilled:<\/strong> Grilling your vegetables adds some char and smokiness to your salad, which will pair nicely with salty cheeses, like feta or kefalotyri. Just make sure you don\u2019t overseason your veggies before grilling. We love grilled <a href=\"https:\/\/test10.co.za\/C\/recipe\/charred-broccoli-and-baby-gem-salad\/\">tenderstem broccoli<\/a>, eggplant, <a href=\"https:\/\/test10.co.za\/C\/recipe\/avo-on-greens-with-mustard-vinaigrette\/\">baby marrow<\/a>, <a href=\"https:\/\/test10.co.za\/C\/recipe\/chargrilled-spring-onion-pea-asparagus-salad-with-jalapeno-vinaigrette\/\">spring onions<\/a> and roasted peppers, but the options are endless.<\/p>\n<p><strong>Roasted:<\/strong> Roasting your veg encourages caramelisation and sweetness and also allows you to use more substantial options, like sweet potato, <a href=\"https:\/\/test10.co.za\/C\/recipe\/roasted-butternut-and-cauliflower\/\">butternut<\/a> and <a href=\"https:\/\/test10.co.za\/C\/recipe\/beetroot-goats-cheese-and-watercress-salad-with-a-sweet-mustard-dressing\/\">beetroot<\/a>. Once again, pairing roast veg with an acidic dressing or a salty cheese will give you a <em>delish<\/em>, balanced meal.<\/p>\n<hr \/>\n<h3>Dressing<\/h3>\n<p>A dressing is so important to a salad that we have dedicated an entire <a href=\"https:\/\/test10.co.za\/C\/guide-to-making-the-best-vinaigrettes\/\">article<\/a> to it! Seriously, if you\u2019re not dressing your salads, you\u2019re missing out. There is a lot of room to play here, but make sure your &#8216;crunchies&#8217; are well-seasoned and sog-resistant. Here are some of our favourite options:<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/caesar-salad-with-homemade-croutons\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/01\/Caesar-Salad-with-Homemade-Croutons-4x6.jpg\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/recipe\/roasted-masala-spiced-nuts\/\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/10\/Roasted-Masala-Spiced-Nuts-4X6-1.jpg\" \/><\/a><\/div><\/div>\n<p><strong>Croutons:<\/strong> Ye old faithful crouton! Don\u2019t buy store bought, just <a href=\"https:\/\/test10.co.za\/C\/recipe\/caesar-salad-with-homemade-croutons\/\">make your own<\/a> with some stale bread fried in olive oil and your choice of spice. Making them at home also allows you to customise the flavours.<\/p>\n<p><strong>Seeds<\/strong>: Extra crunchy and super nutritious. Seeds are a great way to add some extra nutrients to your salad. Pumpkin seeds, sunflower seeds, linseeds and sesame are some of our favourites and all toast really well. If you\u2019re looking for some extra kick, toss them in some olive oil, salt and smoked paprika.<\/p>\n<p><strong>Nuts:<\/strong> Another great way to add extra nutrients to your salad. Almonds, pecans, and cashews are our favourites. Always toast to get that <a href=\"https:\/\/test10.co.za\/C\/recipe\/roasted-masala-spiced-nuts\/\">extra bit of flavour<\/a> out of them!<\/p>\n<p><strong>Crispy Chickpeas<\/strong>: Think of these as a gluten-free crouton alternative. They are easy enough to make at home, but if you don\u2019t feel like the effort, we love <a href=\"https:\/\/test10.co.za\/C\/we-speak-to-the-founder-of-the-cheaky-co-the-chickpea-expert\/\">Cheaky Co. Chyps<\/a>! They\u2019re available in most major supermarkets and grocers and come in a variety of great flavours, like salt and vinegar or black pepper. A great salad hack!<\/p>\n<p><strong>Crispy Bacon Bits:<\/strong> For a more indulgent salad-meal (salad that becomes a whole meal) crispy bacon bits are a great way to add some fat and flavour. We suggest using a <a href=\"https:\/\/test10.co.za\/C\/recipe\/broccoli-apple-walnut-salad-with-candied-bacon-bits\/\">creamy dressing<\/a> to balance out the saltiness.<\/p>\n<p><strong>Savoury Granola:<\/strong> Yup! That\u2019s right. Oats are an amazing vehicle for flavour when paired with a fat and roasted in the oven. Instead of using warming spices, like cinnamon and cardamom, try adding more savoury notes like cayenne, paprika and fennel seeds.<\/p>\n<hr \/>\n<h3>Optional<\/h3>\n<p>Now that you\u2019re sorted with a delicious, well-seasoned salad, you can start to add some optional ingredients. Think cheese, protein or a <a href=\"https:\/\/test10.co.za\/C\/different-types-of-african-indigenous-grains\/\">grain<\/a>. But remember, the simpler the better. For vegetarian options, think of adding lentils or chickpeas.<\/p>\n<p><strong>Cheese:<\/strong> Cheese can add texture, either creamy or crumbly. Feta is the most popular and cost-effective addition and is great for adding saltiness too. <a href=\"https:\/\/test10.co.za\/C\/recipe\/fresh-broccoli-salad-almonds-shaved-parmesan\/\">Parmesan shavings<\/a> also add a salty umami element. If you\u2019re feeling flush, try Greek kefalotyri cheese \u2013 it\u2019s like Greek feta made from sheep or goat\u2019s milk and it&#8217;s amazing!<\/p>\n<p><strong>Grains:<\/strong> Grains add bulk and make a salad more filling. We love couscous, barley, <a href=\"https:\/\/test10.co.za\/C\/recipe\/bulgar-wheat-kale-halloumi-salad-with-clemengold-dressing\/\">bulgar wheat<\/a>, <a href=\"https:\/\/test10.co.za\/C\/recipe\/roast-butternut-quinoa-salad-nuts-seeds\/\">quinoa<\/a> and even <a href=\"https:\/\/test10.co.za\/C\/noodle-salad-with-lamb-chops-and-coconut-dressing\/\">noodles<\/a>!<\/p>\n<p><strong>Fruit:<\/strong> Fruit adds <a href=\"https:\/\/test10.co.za\/C\/recipe\/watermelon-labneh-salad-with-granola-and-fresh-mint\/\">sweetness<\/a>, crunch and texture. Apples, pears and grapes add crunch and contrast, while <a href=\"https:\/\/test10.co.za\/C\/recipe\/westfalia-avocado-and-berry-salad\/\">avocado<\/a> adds creaminess. <a href=\"https:\/\/test10.co.za\/C\/recipe\/raspberry-goats-cheese-salad-raspberry-dressing\/\">Berries<\/a><span style=\"font-weight: 400;\"> also add delicious tartness.
