What people are forgetting is that apart from the obvious meats and soups, fresh fruit and veggies can also be frozen. Sure, there are some particularities that require a little more work but hey, you\u2019ll be the last one laughing because your herbs and veggies are intact.<\/p>\n<h4>Freeze Your Fresh Veggies<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-77496 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/vegetables-1x5-1.jpg\" alt=\"freeze \" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/vegetables-1x5-1.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/vegetables-1x5-1-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/vegetables-1x5-1-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>You\u2019re very lucky that I\u2019m giving it to you upfront, so let\u2019s get down to brass tacks &#8211; how to freeze your veggies!<\/p>\n<ol>\n<li>Wash your veggies, I feel like I shouldn\u2019t even have to mention this because it\u2019s a given but for all you folk who need a step-by-step, here we are.<\/li>\n<li>Chop-chop-chop it up. Here it would be preferable if you chop your veggies into the sizes that you\u2019re going to later cook them in. It\u2019s very hard to chop them after they have been defrosted, they basically turn mushy.<\/li>\n<li>Quickly blanch those veggies in the pan to keep their texture (snap) and colour. It also helps preserve produce by reducing active enzymes. Take note, this does not apply to all veggies but mainly for green beans, asparagus, broccoli, carrots, you get the gist.<\/li>\n<li>Pop them into a freezer bag and forget about them until you need them again. They can last up to two to three months in the freezer.<\/li>\n<li>Defrost those veggies in the fridge or in the pan! Cook them within a few days though or else they become extra mushy.<\/li>\n<\/ol>\n<p>Here\u2019s a list of veggies that you can put into the freezer raw with no problem at all. Aubergines, onions, mushrooms, tomatoes, squash, zucchini are totally fine to put into a freezer bag and throw it in.<\/p>\n<h4>Herbs &#8211; Yup, They Can Go Into The Freezer Too<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-77497 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/herbs-1x5-2.jpg\" alt=\"freeze \" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/herbs-1x5-2.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/herbs-1x5-2-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/herbs-1x5-2-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>I still don\u2019t understand why herbs come in such big bunches, I always use it but it\u2019s so sporadically throughout the week that by the time I need more, it\u2019s already expired and wilted. So there I go, dragging myself to Woolies to get R11 worth of coriander when all I really needed was maybe less than a \u00bc of that. ANYWAY, I&#8217;ve gone on a tangent &#8211; the point is once you learn how to freeze your herbs, you\u2019ll end up reducing your food waste!<\/p>\n<p>There are so many methods out there, but I\u2019m here to tell you the <strong>best<\/strong>\u00a0one. Freeze them in oil.<\/p>\n<ol>\n<li>Remove the stems of your herbs. Realistically, you won&#8217;t use them for anything later on except for the stems of coriander and parsley. A lot of the flavour from coriander comes from the stems so keep those bad boys on there.<\/li>\n<li>Chop those herbs up! They need to be chopped very finely, just use a knife, it\u2019s not that hard. If you want to take it an extra step you can use a food processor but seems like a lot of effort for not that much more of a pay off.<\/li>\n<li>Place those herbs onto an ice tray- put those chopped herbs into each one of the cubes on the tray and then top off each cube with some oil. Once they are solid you can add them to a freezer bag if you intend to keep them in the freezer for longer than 2 months.<\/li>\n<\/ol>\n<p>And there you go, that\u2019s how you freeze herbs. They will make great additions to pastas, sauces and soups. Unfortunately they wont be great to add to salads because they end up a little mushy after being in the freezer.<\/p>\n<h4>Freeze Your Fruits<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-77498 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/berries-1x5-1.jpg\" alt=\"freeze \" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/berries-1x5-1.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/berries-1x5-1-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/berries-1x5-1-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Fruits like berries, mango, bananas, go off a lot quicker than apples or naatjies. So it\u2019s annoying when the blueberries you bought four days ago go off and then you\u2019re left feeling like you\u2019ve wasted your money for nothing. Well do not stress! You can also freeze fruits, who knew?<\/p>\n<ol>\n<li>Wash the fruit! Sounds simple enough? That\u2019s because it is.<\/li>\n<li>Cut the fruit up that needs cutting, i.e. bananas, mangos, watermelon, etc&#8230;<\/li>\n<li>In order to prevent fruit from sticking to each other and making it impossible to pick apart, it&#8217;s best to spread out your fruit cubes and berries out on a baking sheet and freeze it that way first. After they are already frozen you can toss them into a freezer bag. I\u2019ve read you should do this with grapes too but to be honest with you, I don\u2019t and they remain perfect.<\/li>\n<li>Prevent your fruits from getting mushy and let them thaw at room temperature. However when it comes to berries, it\u2019s best to eat them frozen or semi frozen. Either throw them in a smoothie, dough (if you\u2019re baking), yoghurt, or just eat them alone like I do.<\/li>\n<\/ol>\n<h4>Fish, Meats and Poultry<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-77499 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/meat-1x5-1.jpg\" alt=\"\" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/meat-1x5-1.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/meat-1x5-1-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/meat-1x5-1-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>This is a pretty self-explanatory one but it\u2019s best to store these meats in a air-tight freezer bag. The less air in there, the better. The logic behind this is if there is air in the bags that the meat is freezing in, it risks losing its moisture which in turn might give it an odd taste. One thing to note is to never, and I repeat never, freeze pre-stuffed meat or poultry. The filling can potentially develop bacteria which can infect your meat during the thawing process.<\/p>\n<p>Meats can generally last in the freezer up to a year but on the safe side it\u2019s best to only keep meats in there for three to four months. For fresh chicken it can be in the freezer from six months to a year. However, if after thawing it looks a bit dried out or grey you need to chuck it because it has most likely developed freezer burn. When thawing your meat it\u2019s best to for it be thawed in the refrigerator, this might take some time but running it under hot water might cook some parts of it and might ruin the flavour of the meat.<\/p>\n<h4>Freeze Your Extra Sauces, Soups and Condiments<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-77500 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/pesto1x5.jpg\" alt=\"freeze \" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/pesto1x5.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/pesto1x5-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/pesto1x5-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>I\u2019m sorry to be the one to tell you, but anything oil-based won\u2019t freeze, it will unfortunately break in the freezer. So think mayo\u2019s and aiolis- they won\u2019t freeze properly and you\u2019ll just end up disappointed. The good news is that salsa, <a href=\"https:\/\/test10.co.za\/C\/recipe\/basil-pesto-pea-pecorino-pasta-salad\/\" target=\"_blank\" rel=\"noopener noreferrer\">pesto<\/a>, <a href=\"https:\/\/test10.co.za\/C\/recipe\/healthy-homemade-hummus\/\" target=\"_blank\" rel=\"noopener noreferrer\">hummus<\/a>, kimchi, jams, chutneys and condiments like that can be frozen. Pop them into smaller freezer bags so that you can take out as much as you need versus taking out the whole bag and letting the rest of it go to waste. This can last up to four months in the freezer. Don\u2019t stress too much about the thawing process, you can just throw whatever frozen sauce you need into whatever you\u2019re cooking.<\/p>\n<h4>Cheese Can Be Put Into The Freezer Too<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-77501 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/cheese-1x5-1.jpg\" alt=\"\" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/cheese-1x5-1.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/cheese-1x5-1-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2020\/03\/cheese-1x5-1-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>This changes everything. If you want to freeze your solid <a href=\"https:\/\/test10.co.za\/C\/simple-guide-cheese-wine-pairing\/\" target=\"_blank\" rel=\"noopener noreferrer\">cheese<\/a> it&#8217;s better if you grate it first and then place into a, yep you guessed it, an airtight freezer bag. Apparently it is recommended to add a tablespoon of cornstarch to help prevent the cheese from sticking together. I have never done that, so do what you feel is best. Once thawed (in the fridge) this cheese will be great to add to pastas, pizzas, soups, quiches, what have you &#8211; just not sandwiches.
