The dish works equally well with canned chickpeas or lentils.<\/p>\n<p>Serves 2 | Preparation time 10 minutes | Cooking time 30 minutes (mostly unattended)<\/p>\n<h4>WHAT YOU\u2019LL NEED<\/h4>\n<p>400 g peeled and cubed pumpkin<br \/>\n1\u20132 Tbsp olive oil<br \/>\n\u00bd tsp ground cumin<br \/>\n\u00bd tsp ground coriander<br \/>\n40g mixed salad greens<br \/>\n1 x 400 g can chickpeas or lentils, drained<br \/>\n\u00bd red onion, finely chopped<br \/>\n1 Tbsp each chopped fresh mint and parsley (or coriander)<br \/>\n100 g feta or soft goat\u2019s cheese<br \/>\nsalt and freshly ground black pepper<br \/>\n*Avocado, optional<\/p>\n<h4>Herbed Yoghurt Dressing<\/h4>\n<p>\u00bd cup natural yoghurt<br \/>\n1 Tbsp olive oil<br \/>\n1 Tbsp chopped fresh parsley<br \/>\n1 Tbsp chopped fresh mint or basil<br \/>\n1 tsp lemon zest<br \/>\n1 Tbsp lemon juice<br \/>\nsalt and freshly ground black pepper to taste<\/p>\n<h4>WHAT TO DO<\/h4>\n<ol>\n<li>Preheat the oven to 200 \u00b0C.<\/li>\n<li>Using a large baking tray, toss the pumpkin with the olive oil and spices until coated, and then roast on the middle shelf for 45-50 minutes or until golden and cooked through, then set aside to cool.<\/li>\n<li>Prepare the salad dressing and set aside.<\/li>\n<li>Add the salad leaves to a large serving bowl and then layer in the remaining ingredients, serve immediately along with the salad dressing.<\/li>\n<\/ol>\n<p>*Note, for a simpler salad dressing, simply drizzle over olive oil and lemon juice.<\/p>\n<p><a href=\"https:\/\/www.miele.co.za\/\" target=\"_blank\" rel=\"noopener\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-45514\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/Leaderboard728x90.jpg\" alt=\"Sarah loves Miele Leaderboard banner\" width=\"728\" height=\"90\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/Leaderboard728x90.jpg 728w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/Leaderboard728x90-300x37.jpg 300w\" sizes=\"auto, (max-width: 728px) 100vw, 728px\" \/><\/a><\/p>\n<h3>Aubergine Stacks with Speedy Salsa Verde<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-60577\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/07\/Miele-Aubergine-1-x-6.jpg\" alt=\"cooking veggies with sarah graham\" width=\"1000\" height=\"650\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/07\/Miele-Aubergine-1-x-6.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/07\/Miele-Aubergine-1-x-6-300x195.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/07\/Miele-Aubergine-1-x-6-940x611.jpg 940w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2018\/07\/Miele-Aubergine-1-x-6-222x144.jpg 222w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>&#8220;I suppose that there are elements of this that make me think of it as a sort-of deconstructed Melanzane, but it\u2019s also fresher and lighter and free of endless bubbling cheese (not that endless bubbling cheese could ever be a bad thing). Let\u2019s call it a springtime cousin, shall we? Either way, it\u2019s one of Rob\u2019s very favourite favourites, it\u2019s budget-friendly and beautiful. The addition of the \u2018speedy salsa verde\u2019 gives it a little lemony kick that I love.&#8221; &#8211; Sarah Graham<\/p>\n<p>Serves 2 | Preparation time 15 minutes | Cooking time 30 minutes (mostly unattended)<\/p>\n<h4>WHAT YOU\u2019LL NEED<\/h4>\n<p>aubergines<br \/>\nolive oil<br \/>\nabout 1\/3 cup finely grated Parmesan cheese (or hard cheese of your choice)<br \/>\n2 medium-sized aubergines, sliced lengthways 1 cm thick<br \/>\nabout 1\/3 cup feta cheese, to crumble over the aubergines when serving<br \/>\nbaby basil leaves, for garnishing<\/p>\n<h4>Tomato Sauce<\/h4>\n<p>\u00bd Tbsp olive oil<br \/>\n1 clove garlic, crushed<br \/>\n4 ripe tomatoes, roughly chopped (set over a sieve for 5\u201310 minutes for some of the liquid to drain off)<br \/>\n1 Tbsp roughly chopped fresh basil, stalks included<br \/>\n1\u20132 sprigs fresh oregano (if available)<br \/>\n1 level tsp dried chilli flakes<br \/>\npinch of salt and freshly ground black pepper<br \/>\npinch sugar or preferred healthy natural sweetener<\/p>\n<h4>Speedy Salsa Verde<\/h4>\n<p>handful fresh basil<br \/>\n1 small clove garlic<br \/>\n1\u20132 tsp sunflower seeds<br \/>\n1 tsp lemon zest<br \/>\n1\u20132 Tbsp lemon juice<br \/>\n1\u20132 Tbsp olive oil<br \/>\npinch of salt<br \/>\nhealthy natural sweetener, to taste (I like to use 4\u20136 drops stevia liquid or 1\u20132 tsp rice malt syrup)<\/p>\n<h4>WHAT TO DO<\/h4>\n<ol>\n<li>Preheat the oven to 200 \u00b0C.<\/li>\n<li>Add a drizzle of olive oil and a generous sprinkling of Parmesan to the top of each aubergine slice and lay them side by side on a nonstick baking tray. Bake for 25\u202fminutes, or until golden and the edges are starting to crisp. Remove and set aside.<\/li>\n<li>While the aubergines bake, prepare the tomato sauce by placing a small heavy-based saucepan on the stove over medium heat. Add the olive oil and, when it\u2019s hot, cook the garlic for a minute until fragrant. Add the remaining ingredients, stir, bring to a gentle bubble and leave to simmer with the lid off for 20 minutes, or until the colour has deepened and the mixture has thickened.<\/li>\n<li>Prepare the salsa verde by finely chopping the basil, garlic and sunflower seeds on a wooden chopping board. Once chopped, add to a small bowl along with the lemon zest. Drizzle in the lemon juice and olive oil, season with salt and a dash of your preferred natural sweetener and adjust to taste.<\/li>\n<li>To serve, layer into large bowls or onto plates as follows: Aubergine slice, tomato sauce, crumbled feta; repeat until you have used all of the ingredients. Drizzle 1\u20132\u202ftsp of salsa verde over each serving, add a few fresh baby basil leaves to garnish and serve immediately.<\/li>\n<\/ol>\n<p>Tip: Place a damp cloth under your chopping board so that it is secure and doesn\u2019t move around.
