We think carrots and dessert make a perfect marriage &#8211; try our baked carrot and coconut custard, it is to die for.<\/p>\n<p><strong>Serves:<\/strong> 6<br \/>\n<strong>Difficulty:<\/strong> Easy<br \/>\n<strong>Preparation time:<\/strong> 15 minutes<br \/>\n<strong>Cooking time:\u00a0<\/strong>60 minutes<\/p>\n<h4>CUSTARD<\/h4>\n<p>1 (500 g) bag Findus baby carrots, cooked<br \/>\n1 C (250 ml \/ 125 g) cake flour<br \/>\n1 C (250 ml \/ 250 g) evaporated milk<br \/>\n1 C (250 ml \/ 250 g) coconut cream<br \/>\n\u00bc C (60 ml \/ 50 g) brown sugar<br \/>\n\u00bc C (60 ml \/ 170 g) condensed milk<br \/>\n\u00bc C (60 ml \/ 56 g) salted butter, melted<br \/>\n2 tsp (10 ml) vanilla essence<br \/>\n2 large eggs<br \/>\npinch ground cinnamon<\/p>\n<h4>TO SERVE<\/h4>\n<p>\u00bd C (125 ml \/ 125 g) double cream yoghurt<br \/>\nHoney, to drizzle<br \/>\n100 g peanut brittle, finely chopped<\/p>\n<h4><strong>CUSTARD<\/strong><\/h4>\n<p>Preheat the oven to 160 \u00b0C and lightly grease an 18 x 18 cm baking dish with non-stick cooking spray.<\/p>\n<p>Place the carrots in a food processor and blend until smooth. Add the remaining ingredients and blend until combined. Pour the mixture into the prepared dish and bake for 45-50 minutes until set but slightly wobbly. It will firm up more as it cools.
