We love this recipe for chia pudding pots by Sarah Graham, not only do they look super pretty, but they tick the boxes in terms of healthy and light. This is a great recipe for dessert or even a cheekily indulgent breakfast.<\/p>\n<h4>Make Sarah Graham&#8217;s Prettiest\u00a0Pink Chia Pudding Pots with Berry &amp; Basil<\/h4>\n<p><strong>Serves<\/strong>: 4<br \/>\n<strong>Prep Time<\/strong>: 15 min<br \/>\n<strong>Setting Time<\/strong>: 3 hours or overnight<\/p>\n<p><a href=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/10\/Chia-Pudding-pots-1-x-56.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-50372 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/10\/Chia-Pudding-pots-1-x-56.jpg\" alt=\"Sarah Graham's Prettiest Pink Chia Pudding Pots \" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/10\/Chia-Pudding-pots-1-x-56.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/10\/Chia-Pudding-pots-1-x-56-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/10\/Chia-Pudding-pots-1-x-56-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<h4>WHAT YOU\u2019LL NEED<\/h4>\n<p><strong>Quick Chia Berry Jam<\/strong><\/p>\n<p class=\"p1\"><span class=\"s1\">2 cups frozen mixed berries (or use fresh berries, or even fresh stone fruit, roughly chopped \u2013 this is a great way to use up fruit that is really ripe)<br \/>\n<\/span><span class=\"s1\">2\u20133 Tbsp honey or alternative\u00a0healthy natural sweetener<br \/>\n<\/span><span class=\"s1\">juice and zest of 1 orange or clementine (optional)<br \/>\n<\/span><span class=\"s1\">\u00bc cup\u00a0chia seeds<\/span><\/p>\n<p><strong>Chia Pudding Pots<\/strong><\/p>\n<p>2-3 Tbsp (30-45 ml) chia seeds<br \/>\n1 cup double-thick Greek yoghurt (or, my preference, coconut cream)<br \/>\n\u00bc cup Quick Chia Berry Jam (recipe included)<br \/>\nbaby basil leaves (or mint), for garnishing<br \/>\nfresh or frozen berries, for garnishing<\/p>\n<h4>WHAT TO DO<\/h4>\n<p><strong>For the Jam<\/strong><\/p>\n<p><span class=\"s1\">Simmer the berries, honey, juice and zest in a heavy-based\u00a0saucepan\u00a0over low heat for 20\u201330\u00a0minutes, or until reduced by half and starting to thicken. Remove and set aside to cool.\u00a0<\/span><span class=\"s1\">Once the berry mixture has cooled slightly, stir through the\u00a0chia seeds and then transfer to a\u00a0sterilised\u00a0glass jar and store in the fridge. Lasts up to two weeks.<\/span><\/p>\n<p><strong>For the Chia Pudding Pots<\/strong><\/p>\n<p>Mix together the chia seeds and Greek yoghurt. Then stir in the jam and mix as much or as little as you like (berry ripple or pink perfection, you choose). Divide between four small glass jars or pretty glasses and refrigerate for at least 3 hours, or preferably overnight.<\/p>\n<p>Just before serving, garnish with fresh baby basil leaves (or use mint) and berries.<\/p>\n<p><strong>Tips<br \/>\n<\/strong>On the go: Make these in small glass jars with lids for breakfast on the go, adding a generous scattering of Everything Granola (see page 32) or mixed seeds and nuts once they are set.<\/p>\n<p>Make them chocolate! Leave out the berry jam and instead add 2\u20133 tsp cacao powder, a dash of vanilla extract and 1\u20132 tsp maple syrup. Mix well and refrigerate until serving.
