She travels from Bo Kaap to Limpopo, from Qunu to Calvinia, collecting stories, experiences and recipes along the way.<\/p>\n<p>The book covers curries with influences from many different cultures and the result is quite literally a melting pot of aromatic recipes ranging from really easy, to a little more complex. You can also use skinless pieces, but do use a variety of pieces like the thighs and legs \u2013 chicken breast meat alone can get awfully dry. You can also steam or pan-fry the potato cubes if you\u2019d like to use less oil.<\/p>\n<p><strong>Serves:<\/strong> 4 to 6<\/p>\n<p>\u00bd medium onion, halved and sliced<br \/>\n10 ml (2 t) fl our<br \/>\n250 ml (1 C) oil<br \/>\n1,2 kg chicken (with skin), chopped into 8\u201310 pieces<br \/>\n5 ml (1 t) turmeric<br \/>\n5 ml (1 t) cumin seeds<br \/>\n5 ml (1 t) ground cumin<br \/>\n10 ml (2 t) ginger and garlic paste<br \/>\n10 ml (2 t) red chillies (fresh or dried), coarsely chopped<br \/>\n2,5 ml (\u00bd t) saffron<br \/>\n15 ml (1 T) lemon juice<br \/>\n5 ml (1 t) vinegar<br \/>\nSalt<br \/>\n30 ml (2 T) ghee<br \/>\n4 medium potatoes, cut into chunks<\/p>\n<p><strong>Tomato paste<br \/>\n<\/strong>2 ripe medium tomatoes, cut into pieces<br \/>\n10 ml (2 t) tomato paste<\/p>\n<p><strong>To serve<br \/>\n<\/strong>Fresh coriander, basmati<br \/>\nrice and lemon pickle (recipe available in the book)<\/p>\n<p>Dredge the onion in a little flour, shake to cover well and fry in 60 ml (\u00bc C) of the oil until crisp. Drain on paper towel and set aside.<br \/>\nCoat the chicken with all the spices, lemon juice, vinegar and salt. Mix well. Allow to marinate for at least 30 minutes.<br \/>\nHeat the ghee in a large, heavy-based saucepan on medium heat.<br \/>\nAdd the chicken and turn the heat to high. Cook for 10 minutes. Turn the heat down to medium and cook without the lid until all the water from the chickenevaporates. Stir regularly.<br \/>\nWhile the chicken is cooking, add the tomato paste ingredients to a small frying pan and simmer on low heat until the sauce reduces and thickens. This will take about 20 minutes. Season with salt and stir the tomato paste mixture into the chicken.<br \/>\nHeat the remaining oil (you may use more or less) on high in a deep frying pan. Add the potatoes and fry until golden on the outside and soft on the inside. Remove and drain on paper towels.<br \/>\nAdd the potatoes to the chicken while still hot and sprinkle the onions over the top.<\/p>\n<hr \/>\n<h3><strong>Vanie\u2019s Slow-cooked Chicken Curry<\/strong><\/h3>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/Curry-Recipe-Book-5x7.jpg\" alt=\"Book Review Curry\" width=\"500\" height=\"700\" \/><\/div><div class=\"rir-cols-2\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/Curry-Recipe-Book-Recipe-2-5x7.jpg\" alt=\"Book Review Curry\" width=\"500\" height=\"700\" \/><\/div><\/div>\n<p>Using a curry powder blend (like we did in this recipe), instead of a fiery-hot Durban masala, will produce a paler sauce and cut down on the bite if you don\u2019t feel like that amount of spiciness. Most days Vanie reverts to the masala, though. The addition of mint at the end gives the dish a unique taste and cooking it at a low temperature for a long time ensures a fall-off-the-bone curry.<\/p>\n<p><strong>Serves<\/strong> 4<br \/>\n8 chicken thighs<br \/>\n80 ml (1\/3 C) plain yoghurt<br \/>\n45 ml (3 T) juice of finely<br \/>\ngrated ginger<br \/>\n3 cloves garlic, crushed<br \/>\n8 curry leaves (optional)<br \/>\n30 ml (2 T) masala or curry powder (hot)<br \/>\n5 ml (1 t) turmeric<br \/>\n15 ml (1 T) oil<br \/>\n50 g butter<br \/>\n5 ml (1 t) cumin seeds<br \/>\n5 ml (1 t) coriander seeds<br \/>\n5 ml (1 t) black mustard seeds<br \/>\n2 bay leaves<br \/>\n2 star anise<br \/>\n1 cinnamon stick<br \/>\n1 black cardamom, crushed<br \/>\n2 onions, thinly sliced<br \/>\n2 chillies, thinly sliced<br \/>\n2 tomatoes, diced<br \/>\nSalt<br \/>\n2 potatoes, peeled and diced<br \/>\n250 ml (1 C) boiling water<br \/>\n1 handful fresh coriander, roughly chopped<br \/>\n1 handful fresh mint, roughly chopped<br \/>\n10 ml (2 t) garam masala<\/p>\n<p><strong>To serve<\/strong><br \/>\nRice or roti<\/p>\n<p>Preheat the oven to 160 \u00b0C.<br \/>\nPlace the chicken pieces, yoghurt, ginger juice, garlic, curry leaves, curry powder and turmeric into a large bowl and mix well. Cover and set aside.<br \/>\nHeat a large, heavy-based saucepan on medium heat; add the oil and butter.<br \/>\nTemper the spices \u2013 cumin, coriander and black mustard seeds, bay leaves, star anise, cinnamon stick and crushed black cardamom.
