Owning a set of <a href=\"https:\/\/test10.co.za\/C\/kitchen-knives-every-aspiring-cook\/\">good knives<\/a> also greatly improves your knife skills. If you\u2019re working with a carrot, cut it in half so you have two equal lengths to work with. Then, trim off one end so that you have a secure base to work on. Next, cut off little blocks, before slicing those into little, even sticks \u2014 otherwise known as <em>julienne<\/em>. The dimensions for julienne are roughly 3mm x 3mm x 5cm. As the name suggests, &#8216;Julienne fine&#8217; is an even finer version of the same cut (0.5mm \u00d7 1.5mm \u00d7 3-5cm).<\/p>\n<h4><strong>Jardiniere<\/strong><\/h4>\n<p>Similar in shape to julienne, a jardiniere cut is slightly bigger, however, they are roughly 5mm x 5mm x 5cm (although, they can be slightly longer).<\/p>\n<h4><strong>Batonnet<\/strong><\/h4>\n<p>This cut sits between the julienne and baton, and usually measures about 5 cm in length and 1 cm width.<\/p>\n<h4><strong>Baton<\/strong><\/h4>\n<p>A much larger, thicker version of julienne and jardiniere cut; a baton usually measures about 1.5 x 5 cm.<\/p>\n<p><a href=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/marcedoine_1000x400.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-45802\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/marcedoine_1000x400.jpg\" alt=\"mise en place\" width=\"1000\" height=\"400\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/marcedoine_1000x400.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/marcedoine_1000x400-300x120.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/marcedoine_1000x400-940x376.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<h4>Large Dice (Carr\u00e9)<\/h4>\n<p>Large dice is pretty much what the name says \u2013 a cubed cut measuring 2 cm evenly, all round.<\/p>\n<h4>Medium Dice (Parmentier)<\/h4>\n<p>Medium dice is the same style cut as large dice, just slightly smaller\u00a0around 1.5 cm.<\/p>\n<h4><strong>Small Dice (Macedoine)<\/strong><\/h4>\n<p>Macedoine is also a cube shape, but one that measures about 5-6 mm.<\/p>\n<h4>Brunoise<\/h4>\n<p>A small dice measuring\u00a03 mm.<\/p>\n<h4>Brunoise Fine<\/h4>\n<p>An even finer dice measuring in at 1.5 mm.<\/p>\n<p><a href=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/torne_1000x400.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-45803\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/torne_1000x400.jpg\" alt=\"Mise en Place\" width=\"1000\" height=\"400\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/torne_1000x400.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/torne_1000x400-300x120.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/08\/torne_1000x400-940x376.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<h4><strong>Tourn\u00e9 \u00a0<\/strong><\/h4>\n<p>A rather 70s cut, the tourn\u00e9 shape, resembles a football and is usually thumb-length. This may sound simple enough, but the cut always needs seven sides.<\/p>\n<h4><strong>Rondelle<\/strong><\/h4>\n<p>As the name suggests, a <em>rondelle<\/em> cut is when the vegetable is cut into circular rounds or disks.<\/p>\n<h4><strong>Oblique<\/strong><\/h4>\n<p>Just as in French, this knife cut is cutting vegetables diagonally into obliques.<\/p>\n<h4><strong>Paysanne<\/strong><\/h4>\n<p><em>Paysanne<\/em> refers to a thinly sliced cut and is often the same shape as the vegetable, for example, a carrot might be cut into thin round slices. Think of slicing vegetables on a mandolin to help visualise how a paysanne cut would be.<\/p>\n<h4>Lozenge<\/h4>\n<p>A diamond-shaped cut. There are varying sizes of scoop shapes.<\/p>\n<h4><strong>Chiffonade<\/strong><\/h4>\n<p>This is a great way of serving soft herbs (parsley, coriander, mint, etc.) as garnish. What you want to do is, take your herbs off the stems, so you\u2019re just left with the leaves. Then gather them and stack the leaves in a neat little pile; next, curl them up so that the pile is nice and tight, then very finely slice the leaves. You want to make sure that you\u2019re slicing, not chopping. This is not the time to be pressing hard, you want to keep the tip of your knife in one spot and slide the knife\u2019s blade backward and forwards to create a thin ribbon.<\/p>\n<h4><strong>Emincer<\/strong><\/h4>\n<p>A very fine knife cut \u2013 emincer usually refers to the thin slices prepared when cutting onions.<\/p>\n<p><em>Ready to practice your knife skills?
