This isa the kind of recipe you save and make over and over again.<\/p>\n<p><strong>Serves:<\/strong> 4<br \/>\n<strong>Difficulty:<\/strong> easy<br \/>\n<strong>Preparation time:<\/strong> 15 minutes<br \/>\n<strong>Cooking time:<\/strong> 35 minutes<\/p>\n<h4>Curry Paste<\/h4>\n<p>\u00bd (100 g) large onion, chopped<br \/>\n\u00bd C (125 ml \/ 20 g) fresh coriander + extra to serve<br \/>\n5 cm (15 g) piece ginger, peeled and chopped<br \/>\n2 (7 g) small Thai green chillies + extra to serve<br \/>\n1\u00bd (40 g) lemongrass stalks, chopped<br \/>\n1 Tbsp (15 ml) olive oil<br \/>\n1 Tbsp (15 ml) lime juice + the zest of 1 lime*<br \/>\n1 Tbsp (15 ml) coriander seeds<br \/>\n2 tsp (10 ml) fish sauce<br \/>\n1 tsp (5 ml) brown sugar<br \/>\n1 tsp (5 ml) ground cumin<br \/>\n\u00bd tsp (2.5 ml) ground turmeric<br \/>\n3 cloves garlic<\/p>\n<h4>Curry<\/h4>\n<p>4 (650 g) deboned and skinned chicken breasts, sliced*<br \/>\n1\u00bd C (375 ml) chicken stock, warm<br \/>\n1 x 400 g tin coconut milk<br \/>\n1 x 500 g <strong>Findus Wok Thai<\/strong><\/p>\n<h4>Rice<\/h4>\n<p>3 C (750 ml) water<br \/>\nsalt<br \/>\n1 C (250 ml \/ 200 g) Jasmine rice<br \/>\n8 lime wedges, to serve<br \/>\nCurry Paste<br \/>\nPlace all of the ingredients in a food processor and blend until fine.<\/p>\n<h4>Method<\/h4>\n<p><strong>Curry Paste<\/strong><\/p>\n<p>Place all of the ingredients in a food processor and blend until fine.<\/p>\n<h4>Curry<\/h4>\n<p>Heat a saucepan over medium heat. Add the prepared paste and cook for 4 minutes. Stir in the chicken and fry for 4 minutes. Pour in the stock and coconut milk and simmer for a further 8 minutes. Add the vegetables and cook for 4 minutes.<\/p>\n<p>For the rice, bring the water and a pinch of salt up to the boil in a saucepan over medium heat. Add the rice and simmer for 15 minutes and then strain.<\/p>\n<p>Scatter extra chopped fresh coriander over the curry and top with extra sliced chillies, if preferred. Serve the rice alongside the curry with lime wedges.<\/p>\n<p>* Traditionally kaffir lime leaves are used instead of lime juice and zest. If available replace the suggested juice and zest with 4 kaffir lime leaves.<\/p>\n<p>TIP 1: The easiest way to remove the skin from fresh ginger is to scrape it off with a teaspoon.<\/p>\n<p>TIP 2: The chicken breasts can be replaced with sliced chicken thighs\u00a0if preferred.
