Producing wines such as the Hidden Valley Sauvignon Blanc Viognier, the winery is a state of the art, gravity fed cellar\u00a0built from stone, wood and glass \u2013 all purposely selected to present a contemporary yet functional structure.<\/p>\n<p>Our vineyards, are situated on the northern slopes of the Helderberg Mountains in Stellenbosch and are planted\u00a0on ancient, decomposed granite soils, consisting of deep fertile\u00a0Oakleaf and Tukulu profiles. This wonderful soil (and the fact that we are 269m above sea level) together with the cool sea breeze result in a very unique and extremely sought after terroir.<\/p>\n<p>The vineyards were planted in 2002 with the most recent being planted in 2016. The grapes used to produce the\u00a0Hidden Valley Sauvignon Blanc Viognier and the other wines are carefully picked from the vineyards. This means that the latest planting material and most\u00a0up to date planting methods were used. The vineyards were planted with great care and all trellised on a double Perold system.<\/p>\n<p>The cellar is surrounded by vineyards, olive groves, almond orchards and fynbos gardens, each occupying an integral part of the farms\u2019 ecosystem.<\/p>\n<p><strong>Tasting Notes<\/strong><br \/>\n<strong>On the nose<\/strong><br \/>\nThis aromatic wine offers orange blossom and tropical fruits.<\/p>\n<p><strong>On the palate<\/strong><br \/>\nWell rounded with perfume and peachy notes from the Viognier, \u00a0complimented by the Sauvignon blanc offering freshness and a long lingering finish of grapefruit and lime.<\/p>\n<p><a href=\"https:\/\/www.hiddenvalleywines.co.za\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>hiddenvalley.co.za<\/strong><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Estate Hidden Valley has a rich history, and, combined with its commitment to\u00a0\u201cworking with nature\u201d is a proud member of the\u00a0Biodiversity and Wine Initiative.
