Adopting a nose-to-tail method of eating not only means you\u2019re consuming more consciously, but you\u2019re also opening your world up to exciting meat dishes that extend beyond fillet.<\/p>\n<h4>So, what is Nose-to-tail dining exactly?<\/h4>\n<p>It\u2019s essentially using up the whole animal carcass, from the literal nose to the literal tail and everything in between. This means using secondary cuts such tri-tip, short ribs and spider steaks, which may not be that popular but are as delicious (if not more) than their well-known primary cut counterparts. The 5th quarter, also referred to as offal also includes all the bits that might make you squeamish, like hearts, necks, liver, kidneys, glands and brains \u2013 all delicious when done right by the way!<\/p>\n<p>Nose to tail also means using the tougher cuts in braises or stews, and then popping the bones into stock, eking out every last scrap of flavour. If this sounds scary, it\u2019s not, just make sure you have a <a href=\"https:\/\/test10.co.za\/C\/where-to-buy-free-range-meat\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>good<\/strong> <strong>butcher<\/strong><\/a> you can call to ask about these cuts. Giles worked at St. John in London for 10 years before opening up\u00a0<a href=\"https:\/\/test10.co.za\/C\/la-tete-restaurant\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>La T\u00eate<\/strong><\/a> and his dedication to his craft truly comes through in his food.<\/p>\n<p>Giles is a master of secondary cuts, with his menu featuring chicken livers, ox heart, pig\u2019s cheeks and even kidneys. She&#8217;s known for putting everything from Deep-fried Chicken Hearts to Pig&#8217;s Head Croquettes on her menu. It\u2019s tricky to say exactly what is on <a href=\"https:\/\/test10.co.za\/C\/foliage-restaurant-franschhoek-cape-town\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Foliage\u2019s<\/strong><\/a> menu because it changes as things become available, but he makes use of the whole beast when it comes in and includes varied cooking techniques to ensure not a scrap is left over.<\/p>\n<p>One thing you can count on, however, is that the menu is always an exciting play on South Africa cuisine with plenty of unusual locally foraged ingredients, one that you can enjoy surrounded by the idyllic Franschhoek mountains.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/foraging-for-edible-wild-mushrooms\/\" target=\"_blank\" rel=\"noopener noreferrer\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/04\/foliage-2.jpg\" alt=\"nose-to-tail\" width=\"500\" height=\"700\" \/><\/a><\/div><div class=\"rir-cols-2\"><a href=\"https:\/\/test10.co.za\/C\/foliage-restaurant-franschhoek-cape-town\/\" target=\"_blank\" rel=\"noopener noreferrer\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2017\/04\/Foliage-1.jpg\" alt=\"nose-to-tail\" width=\"500\" height=\"700\" \/><\/a><\/div><\/div>\n<hr \/>\n<h4><strong>Spek en Bone, Overture,\u00a0<\/strong>\u00a0or any <strong>Bertus Basson restaurant<\/strong><\/h4>\n<p>Bertus Basson seems to have adopted a \u2018catch-me-if-you-can\u2019 approach these days, opening restaurants faster than we can count. Regardless though, his ethos hasn\u2019t changed one bit.
