The sweetness of the peas is wonderful with the tender fish and crispy onions.<\/p>\n<p><strong>Serves: <\/strong>4<br \/>\n<strong>Difficulty: <\/strong>easy<br \/>\n<strong>Preparation time: <\/strong>30 minutes<br \/>\n<strong>Cooking time: <\/strong>30 minutes<\/p>\n<h4>Peas<\/h4>\n<p>600 g (1 bag) <strong>Findus Swedish Whole Green Peas<\/strong>, cooked<br \/>\n\u00bd C (125 ml \/ 30g) mint leaves<br \/>\n\u00bc C (60 ml \/ 30g) Parmesan cheese, finely grated<br \/>\n2 tsp (10ml) lemon juice<br \/>\n1 tsp (5 ml) garlic, finely chopped<br \/>\n100 g feta, crumbled<br \/>\nsalt and pepper<\/p>\n<h4>Fish<\/h4>\n<p>4 (800 g) large hake fillets<br \/>\n\u00bc C (60 ml) tartare sauce<br \/>\n80 ml (\u2153 C \/ 80 g) bread crumbs<br \/>\nsalt and pepper<br \/>\n2 Tbsp (30 ml) butter, softened<\/p>\n<h4>Onion Rings<\/h4>\n<p>1 C (250 ml \/ 125 g) cake flour<br \/>\n\u00bd C (125 ml \/ 60 g) cornflour<br \/>\n\u00bd tsp (2.5 ml) salt<br \/>\n\u00bd tsp (2.5 ml) smoked paprika<br \/>\n2 C (500 ml) beer, chilled<br \/>\n2 (320 g) medium onions<br \/>\nsunflower oil, for deep-frying<\/p>\n<h4>To Serve<\/h4>\n<p>handful pea shoots, to garnish (optional)<br \/>\nlemon wedges<\/p>\n<h4><strong>Peas<\/strong><\/h4>\n<p>Place the cooked <strong>Findus Swedish Whole Green Peas<\/strong>, mint, Parmesan cheese, lemon juice and garlic in a food processor. Blend until fine but not completely pur\u00e9ed. Stir in the feta and season to taste.<\/p>\n<h4><strong>Fish<\/strong><\/h4>\n<p>Preheat the oven grill. Line a baking tray or dish with baking paper or foil.<br \/>\nArrange the hake fillets, skin-side down, on the lined tray. Spread each fillet with tartare sauce. Sprinkle the breadcrumbs on top and season with a little salt and pepper. Dot the fish with butter. Place the fish in the oven on the lowest shelf and cook for 10-12 minutes until the breadcrumbs are crispy and the fish is tender and cooked through.<\/p>\n<h4>Onion Rings<\/h4>\n<p>Heat the oil for deep-frying to 180 \u00b0C.<\/p>\n<p>Whisk the cake flour, cornflour, salt, paprika and beer together. Peel the onions and cut into 1 cm slices. Separate the onion rings.<\/p>\n<p>Using a fork, dip a few onion rings into the beer batter and then transfer to the hot oil. Fry the rings for 1-2 minutes each until crisp and golden. Drain on kitchen paper and season with salt and pepper. Fry the onion rings in 4-5 batches to allow them to cook evenly.<\/p>\n<h4>To Serve<\/h4>\n<p>Serve the fish with the mushy peas and onion rings on the side.
