I quit the course halfway through and then took a gap year as a working holidaymaker in the UK. On my return, I enrolled in Media Studies at the CPUT.<\/p>\n<p>After graduation, I freelanced as a classical music reviewer for Die Burger before working as web editor for a travel startup, and eventually landed a job managing the Eat Out website.<\/p>\n<p>My folks moving to Paternoster coincided with another bout of wanderlust on my part, so I quit my city office job and moved to the country to help them set up the eatery side of the family business. I slowly got back into the cooking groove&#8230;<\/p>\n<h4><a href=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x560.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-28427\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x560.jpg\" alt=\"Kobus van der Merwe\" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x560.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x560-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x560-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/h4>\n<h4>Foraging is quite common these days but you are definitely one of the pioneers \u2013 how did you get into it to begin with?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>I think, similarly to a lot of South Africans, I grew up with my grandparents and parents still very much living off the land \u2013 at least when they had the chance to do so. Holidays at the sea we would spend picking mussels and abalone, and seaweed for making jelly.<\/p>\n<blockquote><p>On family visits to the Kalahari we collected wild watermelon and cucumbers and, on occasion, even desert truffles.<\/p><\/blockquote>\n<p>I am also a huge fan of Leipoldt and grew up with his cookbooks, which always include a strong focus on indigenous veldkos.<\/p>\n<hr \/>\n<h4>How did you learn what worked and what didn\u2019t \u2013 was it trial and error?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>Immersion and experimentation, pretty much \u2013 both in the restaurant kitchen and at home. I love to try and find new combinations or uses for veldkos \u2013 it&#8217;s a continuous exploration.<\/p>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2019\/02\/wolfgat-kobus-vd-merwe-4x6-2.jpg\" \/><\/div><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2019\/02\/kobus-vd-merwe-wolfgat-4x6-1.jpg\" \/><\/div><\/div>\n<h4>There\u2019s that saying \u201cWeskus lus\u2019 and certainly travelling through the area it\u2019s hard not to appreciate its beauty \u2013 what do you think makes this area of our coastline so special?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>The rich history of early civilisation on this coast, the singular beauty of the Strandveld vegetation, the allure of the landscape&#8230;<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-28418\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x1.jpg\" alt=\"Kobus van der Merwe\" width=\"1000\" height=\"656\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x1.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x1-300x197.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x1-940x617.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><br \/>\nWhat are the challenges of relying so heavily on nature for your produce?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>In a drought situation, like we have been experiencing for the past few years, it does become tricky to rely on a wild food component for a large part of the menu. At the height of summer, even some of the usually abundant edible succulents barely cling to life.<\/p>\n<p>I have had a renewed interest in seaweeds, as there are a number of local seaweeds that can be sustainably picked throughout the year.<\/p>\n<blockquote><p>I find the challenge of representing the landscape in all its forms, and in every season, inspiring.<\/p><\/blockquote>\n<hr \/>\n<h4>Is there a particular ingredient that is particularly elusive or sought after? Something that you\u2019re always happy to see?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>Veldkool (trachyandra sp) \u2013 \u00a0it&#8217;s only available for a small window period during winter. I never seem to get enough of it. It&#8217;s so healthy and delicious.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-28424\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x7.jpg\" alt=\"Kobus van der Merwe\" width=\"1000\" height=\"1110\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x7.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x7-270x300.jpg 270w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x7-901x1000.jpg 901w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/07\/Kobus-1000x7-940x1043.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><br \/>\n<b><\/b><\/p>\n<h4>You\u2019re cooking some of the world&#8217;s, best food while entirely remaining true to yourself, how do you avoid getting caught up in the &#8216;hype&#8217; of the culinary industry?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>(That&#8217;s a generous compliment \u2013 thank you). As in most creative industries, I think it&#8217;s important to keep up, to stay informed, to find inspiration&#8230; but to not be consumed by it all. Also, never take yourself too seriously.<\/p>\n<hr \/>\n<h4>We\u2019re guessing that your style of food resonates with people who understand your concept \u2013 have you come up against those who just don\u2019t get it? How do you handle that?<\/h4>\n<p><strong>Kobus van der Merwe:\u00a0<\/strong>This style of food is definitely not everybody&#8217;s cup of tea \u2013 when guests book we make sure that they know what to expect.<\/p>\n<p>As long as people keep an open mind and are willing to try new things, it&#8217;s mostly smooth sailing. As a chef, that&#8217;s your job.<\/p>\n<blockquote><p>But I think the responsibility is shifting, or at least is being shared more and more \u2013 it&#8217;s also up to the consumer to do their homework and to educate themselves about sustainability and seasonality etc.<\/p><\/blockquote>\n<p>If you are someone who enjoys to eat out \u2013 a &#8220;foodie&#8221; even \u2013 it comes with a big responsibility these days. Basically, stop ordering those \u2018mountains of prawns\u2019! And tortured pork bits or feedlot beef.
