Last year, aquafaba was the breakout food star of the year (move over kale) when people realised that the liquid from a can of legumes (chickpeas, white beans etc) could be used as an egg replacement. Everything from mayonnaise to meringues and buttercream to nougat, delicious food items that were traditionally off-limits to vegans and people with egg allergies, are now\u00a0made available without the addition of strange preservatives.<\/p>\n<h4>What is Vegan Aquafaba Mayonnaise?<\/h4>\n<p>Mayonnaise is one such food item, one that is close to most people&#8217;s hearts and it can be tough to imagine\u00a0a burger or a sandwich without it. Well, if you&#8217;re vegan do we have a surprise for you. We played around with aquafaba to create a 100% vegan mayo. And it took absolutely no time at all. And while a few vegan mayos are available to buy at certain health stores, what we love most about making your own is that you know exactly what&#8217;s going into it.<\/p>\n<p>There are no strange additives and its surprisingly easy to make \u2013 dare we say easier than the regular kind, owing to the fact that you don&#8217;t need to emulsify the egg with oil. It easily blends together. And because of the oil, it still has that creamy and satisfying mouthfeel \u2013 in fact, you wouldn&#8217;t know the difference. It&#8217;s surprisingly stable when you add all your flavourings too, so go wild!<\/p>\n<p><a href=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/05\/Aquafaba-mayo-1x56.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-40514 size-full\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/05\/Aquafaba-mayo-1x56.jpg\" alt=\"Aquafaba-vegan mayonnaise\" width=\"1000\" height=\"560\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/05\/Aquafaba-mayo-1x56.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/05\/Aquafaba-mayo-1x56-300x168.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/05\/Aquafaba-mayo-1x56-940x526.jpg 940w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<h3>Recipe for Vegan Aquafaba Mayonnaise<\/h3>\n<p>3 Tbsp (45 ml) aquafaba\u00a0(brine)<br \/>\n1 Tbsp (15 ml) apple cider vinegar<br \/>\n1 tsp (5 ml) mustard (we used Dijon)<br \/>\n1 C (250 ml) oil of your choice (avocado, olive, vegetable)<br \/>\nsalt, to taste<\/p>\n<p>optional flavourings: Sriracha sauce, wasabi, roasted or black garlic<\/p>\n<p>Drain a can of chickpeas and reserve the liquid. (Tip: Use the chickpeas to make this <a href=\"https:\/\/test10.co.za\/C\/recipe\/avocado-hummus\/\"><strong>delicious hummus<\/strong><\/a>.)<\/p>\n<p>Combine the aquafaba\u00a0(brine), apple cider vinegar and mustard in the jug of a hand-held\u00a0mixer. Give a quick whizz to blend.<\/p>\n<p>Add the oil in three parts, whizzing to emulsify after each batch. Add salt and seasonings, taste and adjust.<\/p>\n<p>Add any extra flavourings such as wasabi or Sriracha mix and then serve.
