{"id":25499,"date":"2016-04-25T08:02:53","date_gmt":"2016-04-25T08:02:53","guid":{"rendered":"https:\/\/test10.co.za\/C\/?p=25499"},"modified":"2016-04-20T08:03:30","modified_gmt":"2016-04-20T08:03:30","slug":"new-executive-chef-catharinas-restaurant","status":"publish","type":"post","link":"https:\/\/test10.co.za\/C\/new-executive-chef-catharinas-restaurant\/","title":{"rendered":"New Executive Chef of Catharina\u2019s Restaurant"},"content":{"rendered":"<p>Steenberg Wine Farm\u00a0is\u00a0well known for its\u00a0wine, but also for its culinary offerings from its two onsite eateries \u2013 Catharina\u2019s Restaurant which offers\u00a0fine contemporary dining and Bistro Sixteen82 ,\u00a0which serves\u00a0popular bistro-style fare and tapas.\u00a0General Manager at Steenberg\u00a0John Loubser recently announced a new member to the team.\u00a0\u201cIt gives us great pleasure to announce the appointment of Archie Maclean as our new Executive Chef of Catharina\u2019s Restaurant.\u00a0Archie comes with a wealth of experience, having worked at top luxury properties in South Africa and abroad.\u201d<\/p>\n<blockquote><p>Archie, who grew up in Scotland, moved to South Africa nine years ago, and when asked why he became a chef, says, \u201cI\u00a0don&#8217;t\u00a0have a cooking-with-granny-in-the-kitchen story; the truth is, I only discovered the pleasure of good food much later on in life. I was 19, working as a barman, and I was called into the kitchen one night to help. It was a big deal and the chefs were cool. After that night, I never looked back. I quit my college course and moved to Surrey in England to do a 3-year apprenticeship under Michelin-starred chef, David Evans. My passion grew and grew and I began my culinary journey.\u201d<\/p><\/blockquote>\n<p>Archie has a great deal of experience cooking an array of cuisines in various countries, from\u00a0Scotland\u00a0to Australia and New Zealand, and during the last decade, all over South Africa. \u201cIn South Africa I spent three and a half years at Le Quartier Francais, in The Tasting Room. The Tasting Room has been consistently voted among the top 50 restaurants in the world, so that was phenomenal for me. I worked alongside executive chef Margot Janse, helping her to develop her award-winning menu. From there it was to Asara for 12 months and then to the Kruger Park, where I worked at Singita Lebombo and Sweni. After three years at Singita, where I was responsible for both lodge kitchens and the Singita School of cooking, I moved back to the Cape and started working at Neethlingshof, where I was head chef for the last 11 months,\u201d Archie explains.<\/p>\n<p>Archie, who claims\u00a0he has no favouritism when it comes to ingredients says, \u201cAs long as they are absolutely fresh.\u00a0I don\u2019t like to stick to one type of cuisine or a set of ingredients continuously \u2013 I get bored. One day, mushroom may be the hero of the dish, the next day, beautiful fresh fish.
