{"id":22095,"date":"2015-12-29T03:51:19","date_gmt":"2015-12-29T03:51:19","guid":{"rendered":"https:\/\/test10.co.za\/C\/?p=22095"},"modified":"2016-01-20T12:01:55","modified_gmt":"2016-01-20T12:01:55","slug":"balsamic-tomato-and-maple-glazed-bacon-salad","status":"publish","type":"post","link":"https:\/\/test10.co.za\/C\/balsamic-tomato-and-maple-glazed-bacon-salad\/","title":{"rendered":"Balsamic Tomato and Maple-glazed Bacon Salad"},"content":{"rendered":"<p><a href=\"http:\/\/www.reliance.co.za\/\" target=\"_blank\" rel=\"attachment wp-att-22378\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22378\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/01\/leaderboard_728x90_1.jpg\" alt=\"Reliance Compost\" width=\"728\" height=\"90\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/01\/leaderboard_728x90_1.jpg 728w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2016\/01\/leaderboard_728x90_1-300x37.jpg 300w\" sizes=\"auto, (max-width: 728px) 100vw, 728px\" \/><br \/>\n<\/a>The flavour of baby tomatoes is intensified with slow roasting, add together with crispy bacon and a perfectly poached egg and you have one delicious salad!<\/p>\n<p>Serves: 4<br \/>\nDifficulty: easy<br \/>\nPreparation time: 40 minutes<br \/>\nCooking time: 30 minutes<\/p>\n<p><strong>Balsamic Tomatoes<br \/>\n<\/strong>320 g vine tomatoes<br \/>\n1 Tbsp (1 5ml) Balsamic vinegar<br \/>\n1 tsp (5 ml) garlic, finely chopped<br \/>\n1 tsp (5 ml) honey<br \/>\nsalt and pepper<\/p>\n<p><strong>Maple-glazed Bacon<br \/>\n<\/strong>200 g streaky bacon<br \/>\n1 Tbsp (15 ml) maple syrup<\/p>\n<p><strong>Bruschetta<\/strong><br \/>\n12 baguette slices<br \/>\noil, for drizzling<br \/>\n1 tsp (5 ml) sesame seeds<\/p>\n<p><strong>Poached Eggs<br \/>\n<\/strong>4 extra large eggs<br \/>\nwhite wine vinegar<\/p>\n<p><strong>Dressing<br \/>\n<\/strong>3 Tbsp (45 ml \/ 45 g) butter<br \/>\n2 Tbsp (30 ml) red onion, finely chopped<br \/>\n1 tsp (5 ml) garlic, finely chopped<br \/>\n\u2153 C (80 ml) apple cider vinegar<br \/>\n1 tsp (5 ml) honey<br \/>\n1 tsp (5 ml) cream<br \/>\n1 Tbsp (15 ml) chives, finely chopped<\/p>\n<p><strong>To Assemble<br \/>\n<\/strong>120 g cos lettuce<br \/>\n2 avocados<br \/>\n50 g Pecorino cheese<br \/>\nbasil leaves, to garnish<\/p>\n<p><strong>Balsamic Tomatoes<br \/>\n<\/strong>Preheat the oven to 200 \u00b0C.<\/p>\n<p>Toss the tomatoes, balsamic vinegar, garlic and honey together; season with a pinch of salt and pepper and roast for 15 minutes.<\/p>\n<p><strong>Maple-glazed Bacon<br \/>\n<\/strong>Place the bacon on a baking tray. Roast for 10 minutes. Brush the bacon with maple syrup and roast for another 2-3 minutes until crisp.<\/p>\n<p><strong>Bruschetta<\/strong><br \/>\n<span style=\"line-height: 1.5\">Place the baguette slices onto a baking tray. Drizzle with a little olive oil and scatter sesame seeds onto each slice. Bake for 6-8 minutes until crisp.<\/span><\/p>\n<p><strong>Poached Eggs<br \/>\n<\/strong>Bring a saucepan filled with water to a gentle simmer. Add a splash of white wine vinegar. Gently crack the eggs into the water and poach for 2-3 minutes, for a soft poach, alternatively leave them in for an extra minute or two if you prefer your eggs a little firmer.<\/p>\n<p><strong>Dressing<br \/>\n<\/strong><span style=\"line-height: 1.5\">Heat the butter, onion and garlic in a saucepan over medium heat and gently saut\u00e9 for 1 minute. Add the vinegar, honey and cream and cook for a further 1 minute. Stir in the chives.<\/span><\/p>\n<p><strong>To Assemble<br \/>\n<\/strong>Place the salad leaves into a salad bowl or serving plate. Scatter the tomatoes and bacon on top. Add the poached eggs. Use a spoon to scoop out the avocado flesh into bite-size pieces and add to the salad.
