The strong south westerly\u00a0winds during November serve to naturally thin our crops ensuring greater\u00a0flavour concentration and fruit expression. Intermittent rainfall helps limit\u00a0water stress and ensure optimal ripening. Our grapes are sourced from\u00a0various sites across Durbanville so as to best express the uniqueness of\u00a0Durbanville\u2019s terroir.<\/p>\n<p class=\"p1\">In the ever pursuit of perfection and optimal terroir expression we\u00a0handled the grapes and juice from specially selected parcels in all manner\u00a0of form, where all the components were barrel fermented using wild\u00a0yeasts, and of this 45% was fermented in new French oak adding\u00a0richness and texture.
