The environment is tough, but these chefs are tougher. Their legacies have created a long-lasting impact on the industry, the people who run it and the culture of dining. In honour of Heritage Month, we celebrate some of those luminaries who have put local cuisine on the global map. Here are five South African chefs who are shaping the culinary landscape.<\/p>\n<h4>Anwar Abdullatief<\/h4>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2024\/09\/Chef-Anwar-Abdullatief_source_The-Happy-Uncles_4x6.jpg\" \/><\/div><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2024\/09\/Image_The-Happy-Uncles_Chef-Anwar_4x6.jpg\" \/><\/div><\/div>\n<h6>Image source: The Happy Uncles<\/h6>\n<p><a href=\"https:\/\/test10.co.za\/C\/elegant-dining-and-fine-wines-at-rupert-rothschild-vignerons\/\">Chef Anwar Abdullatief<\/a> is changing the local culinary landscape, as he brings halaal food into the fine dining space. Based in Salt River at The Spice Yard, the restaurant is growing and has quickly gained popularity. Awarded \u2018African Restaurant of The Year\u2019 at the 2024 Luxe Awards and Eat Out Valpr\u00e9 Rising Star Award, chef Anwar combines his love for Cape Malay flavours and African ingredients at his restaurant, <a href=\"https:\/\/www.instagram.com\/the.happy.uncles\/\">The Happy Uncles<\/a>. Having worked at some of the country\u2019s finest restaurants \u2014 including Cavalli, Siba &#8211; The Restaurant, Rupert &amp; Rothschild, Clos Malverne, and Jordan \u2014 Abdullatief and co-owners, Riedaa Manie and Fuad de Vries, closed their catering business to start the praised establishment.<\/p>\n<p>Since its launch in 2022, The Happy Uncles has provided patrons with a long-awaited concept: halaal-friendly fine-dining cuisine. From malva pudding with \u2018melktert\u2019 cr\u00e9meux, koe\u2019sister crumble, boeber ice cream, mebos jelly and cr\u00e8me anglaise to \u2018<a href=\"https:\/\/test10.co.za\/C\/a-guide-to-cape-malay-cooking-terms\/\">ou mense onder die kombers<\/a>\u2019 reimagined, Abdullatief\u2019s menus celebrate Cape Malay cuisine and local flavours, presented creatively and delicately. To entice patrons, The Happy Uncles have various set menus, with the largest having up to eight courses; the menus also change regularly.<\/p>\n<hr \/>\n<h4>Charn\u00e9 Sampson<\/h4>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2022\/08\/Epice_Charne-headshot-4x6-1.jpg\" \/><\/div><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2022\/08\/epice-coconut-pineapple-4x6-1.jpg\" \/><\/div><\/div>\n<h6>Images supplied<\/h6>\n<p><a href=\"https:\/\/test10.co.za\/C\/female-chefs-in-south-africa-epices-charne-sampson\/\">Chef Charn\u00e9 Sampson<\/a> has racked up numerous awards in her illustrious career. The talented chef was previously named one of the Cape\u2019s Top Ten Female Chefs in 2021 and her restaurant earned two stars at the 2023 Eat Out Woolworths Restaurant Awards.<\/p>\n<p>As head chef at Epice, and previously pastry chef at La Colombe, chef Charn\u00e9 is well-versed in the world\u2019s spices as she brings them to life in her dishes at the Franschhoek restaurant, based in the Le Quartier Fran\u00e7ais Hotel. Her menu is inspired by the many flavours of Bo-Kaap and global cuisine; it&#8217;s truly a feast for the senses. Mentored by executive chef James Gaag\u00a0of La Colombe \u2014 one of <a href=\"https:\/\/test10.co.za\/C\/south-africas-la-colombe-restaurant-49th-in-the-worlds-50-best-restaurants\/\">The World\u2019s 50 Best Restaurants<\/a> \u2014 chef Charn\u00e9 Sampson is changing South Africa\u2019s culinary landscape, as she celebrates local flavours and merges her culinary skills with exceptional creativity.<\/p>\n<hr \/>\n<h4>Mmabatho Molefe<\/h4>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2022\/08\/mmabatho_chef_4x6.jpg\" \/><\/div><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2022\/08\/emazulwini_dish_4x6.jpg\" \/><\/div><\/div>\n<h6>Images supplied<\/h6>\n<p><a href=\"https:\/\/test10.co.za\/C\/female-chef-focus-mmabatho-molefe-of-emazulwini\/\">Chef Mmabatho Molefe<\/a> of the renowned Emazulwini celebrates Zulu and Nguni cuisine by paying homage to her fondest childhood food memories, indigenous African ingredients and the concept of nose-to-tail dining.<\/p>\n<p>Honoured by The World\u2019s 50 Best, <a href=\"https:\/\/www.theworlds50best.com\/stories\/News\/50-next-class-2022-announcement.html\" target=\"_blank\" rel=\"noopener\">50 Next<\/a> edition, the talented chef was recognised as one of \u2018The Young People Shaping the Future of Gastronomy\u2019 in 2022. While the award-winning restaurant \u2014 previously situated at Makers Landing, Cape Town \u2014 has since closed its doors, the chef continues to shape South Africa\u2019s culinary landscape. Molefe recently collaborated with chef Ryan Cole at Salsify for a ten-course feast and brought back her famous pop-up dining experience, Long Table with Friends. The owner of MLILO \u2018Fires of Africa,\u2019 a restaurant by EDGE Group, Ndlovu highlights the complex flavours of African cuisine. From Ghanaian shito to Senegalese maafe sauce to South African shisanyama, Ndlovu\u2019s appreciation for indigenous ingredients and the primitive yet innovative concept of cooking with fire is brilliantly executed.<\/p>\n<p>Previously crowned \u2018Young Chef of Africa and Middle-East\u2019 at the S.Pellegrino Awards in 2018 and awarded \u2018Best New Restaurant\u2019 at the Eat Out Awards for Boma on Bree (which he is no longer part of), chef Ndlovu continues to take the local culinary scene by storm with exceptional African cuisine.<\/p>\n<hr \/>\n<h4>Wandile Mabuso<\/h4>\n<div class=\"rir-row\"><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2024\/09\/Chef-Wandile-Mabuso_Image-source_Les-Creatifs_4x6.jpg\" \/><\/div><div class=\"rir-cols-2\"><img decoding=\"async\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2024\/09\/Wandile-Mabuso-dish_Image-source_Les-Creatifs_4x6.jpg\" \/><\/div><\/div>\n<h6>Image source: Les Cr\u00e9atifs<\/h6>\n<p><a href=\"https:\/\/lescreatifs.co.za\/\" target=\"_blank\" rel=\"noopener\">Chef Wandile Mabuso<\/a> has built a steady reputation in the industry, creating one of the most recognised restaurants in the country. The Soweto-born chef has previously worked at some of the top restaurants in New York and Michelin-starred French restaurants before coming back home to South Africa to open his establishment, Les Cr\u00e9atifs.<\/p>\n<p>Situated in Bryanston, Johannesburg, the renowned restaurant merges fine dining with world-class wines and visual art, and has delighted patrons since 2019. Everyone from world ambassadors to Hollywood\u2019s best have dined at the institution. The menu celebrates local produce combined and French culinary techniques, and features dishes like Midlands beef tongue with madumbe <a href=\"https:\/\/test10.co.za\/C\/a-guide-to-cape-malay-cooking-terms\/\">atchar<\/a> mousse, caramelised onion and impepho-smoked beef jus; and Karoo lamb loin with bulgar wheat, umfino and jus.
