From authentic Neapolitan to classic New York-style pizzas, thousands of delicious variations exist, but we\u2019ve also had our fair share of criminal toppings (erm, pineapple and banana). The latest one that\u2019s stirred controversy is ice pizza. To create the signature cheesy dish, grated Pecorino Romano is combined with pasta water, which coats the pasta strands.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-107756\" src=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2023\/10\/cacio-e-pepe_1x65.jpg\" alt=\"\" width=\"1000\" height=\"650\" srcset=\"https:\/\/test10.co.za\/C\/wp-content\/uploads\/2023\/10\/cacio-e-pepe_1x65.jpg 1000w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2023\/10\/cacio-e-pepe_1x65-300x195.jpg 300w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2023\/10\/cacio-e-pepe_1x65-940x611.jpg 940w, https:\/\/test10.co.za\/C\/wp-content\/uploads\/2023\/10\/cacio-e-pepe_1x65-222x144.jpg 222w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Though cacio e pepe has been around for centuries, it\u2019s been rediscovered in recent years\u00a0\u2013 thanks to Michelin-starred chef, <a href=\"https:\/\/test10.co.za\/C\/massimo-bottura-osteria-francescana-interview\/\">Massimo Bottura<\/a>, who famously invented a recipe for cacio e pepe risotto. Now, it seems the classic Roman dish has reinvented itself with yet another carby delight\u00a0\u2013 this time, pizza.<\/p>\n<p>Chef Stefano Callegari of <a href=\"https:\/\/www.facebook.com\/Sbanco-440376599420200\/\" target=\"_blank\" rel=\"noopener\">Sbanco<\/a> is credited for creating ice pizza, also known as \u2018cacio e pepe pizza\u2019 \u2013 a bizarre concept, but not without reason. Once stretched out and ready to bake in the oven, a few ice blocks are placed in the centre of the dough. The cooked pizza base is then removed from the oven, and olive oil and grated cheese is added to the centre. A crack of pepper is all that\u2019s needed to transform the flavours.<\/p>\n<p>But why add ice to pizza you ask? Well, it serves a dual purpose \u2013 the ice melts when cooked, creating a delectable sauce once olive oil and cheese is added; it also helps prevent the centre from burning. Since only four elements are required for the topping (olive oil, cheese, pepper and ice), the base is equally important; sourdough is often used to lend flavour.<\/p>\n<hr \/>\n<h4>The Origins of Pizza<\/h4>\n<p>Cacio e pepe pizza is quite different from other types. In 1700, workers from the southwestern Campania region of Naples ate pizza frequently; it was a for-the-people-by-the-people type of dish.<\/p>\n<p>The Neapolitan waterfront workers, also known as \u2018lazzaroni\u2019 \u2013\u00a0people who had no fixed occupation, often found work by chance, or were homeless\u00a0\u2013 needed something to sustain them throughout the day. Something that was relatively cheap and quick to consume.<\/p>\n<blockquote><p><strong>Did you know?<\/strong> The classic Margherita pizza was named after Italian royal, Queen Margherita of Savoy.<\/p><\/blockquote>\n<p>Even though it was considered a peasant dish, pizza won the approval of Italian royals. On a visit to Naples in 1889, King Umberto I and Queen Margherita of Savoy grew tired of eating French fare and requested a couple of \u2018pies\u2019 from a local pizzeria. The queen particularly enjoyed the \u2018pizza mozzarella\u2019, topped with tomato, soft cheese and basil, so it was named after her.<\/p>\n<p>However, popularity only picked up when Italians migrated to the United States. Many worked in factories as vendors, and some sold pizza. Before everyone knew it, New Yorkers, Bostonians, Chicagoans became obsessed with pizza, leading to the birth of an entire pizza culture far greater than the Neapolitans could imagine.<\/p>\n<p><i>Want a slice?
