It was first identified by a Japanese scientist, Kikunae Ikeda, back in 1908. He isolated the unique taste in seaweed\/kombu broth and labelled it &#8216;umami&#8217; which translates to \u2018pleasant savoury taste\u2019 or \u2018<a href=\"https:\/\/test10.co.za\/C\/umami-the-essence-of-deliciousness\/\">the essence of deliciousness<\/a>\u2019. Since then, MSG has become a staple in Asian cooking, elevating dishes to new heights of flavour.<\/p>\n<hr \/>\n<h3>Chinese Restaurant Syndrome<\/h3>\n<p>Fast forward to the 1960s, and the term \u2018Chinese Restaurant Syndrome\u2019 \u2013 also known as \u2018Monosodium Glutamate Symptom Complex\u2019 \u2013 started making rounds. But let&#8217;s be real, it&#8217;s no coincidence that this stereotype emerged at a time when racial bias was rampant. The syndrome&#8217;s origins were based on unfounded claims that MSG, often used in Chinese and Asian cuisine, was the culprit.<\/p>\n<hr \/>\n<h3>But What Does Science Say?<\/h3>\n<p>The scientific community has thoroughly investigated the alleged link between MSG and these symptoms, leading to the conclusion that most of the claims are based on anecdotal evidence or a &#8216;nocebo effect&#8217; rather than a direct causal relationship. The nocebo effect occurs when perpetuated beliefs about a substance cause individuals to experience adverse effects, even when the substance doesn\u2019t inherently cause harm. However, in Western culture, MSG has often been vilified due to these misconceptions, leading to the rise of &#8216;No MSG&#8217; labels, which are more misleading than some might think. So, why the unwarranted fear?<\/p>\n<p>Like many chefs, David Chang, owner of Momofuku and star of <a href=\"https:\/\/test10.co.za\/C\/the-best-food-shows-to-binge-watch\/\">Netflix food show<\/a> <i>Ugly Delicious<\/i>, recognises that it&#8217;s all about the dosage and how it&#8217;s used. In his words, &#8220;If it makes food taste better, why wouldn&#8217;t you use it?&#8221; \u2013 and we must concur.<\/p>\n<hr \/>\n<h3>Try these Umami Loaded Recipes<\/h3>\n<p>MSG amplifies the natural taste of umami in certain dishes to make them more glutamate-rich.
