Salsa Verde

For a taste of deliciousness, impress guests with this punchy and zingy Salsa Verde.

Makes: 1 cup | Prep: 10 minutes | Difficulty: Easy

Ingredients

A handful of fresh parsley, finely chopped
1 Tbsp (15 ml) capers, drained and chopped
2 garlic cloves, minced
zest and juice of 1 lemon
½  tsp (5 ml) chilli flakes
salt and pepper, to taste
½ C (125 ml) African Gold Extra Virgin Olive Oil

Method

Place the chopped parsley in a bowl along with the chopped capers and minced garlic.

Add lemon zest and juice to the herb and garlic mixture.

Add the chilli flakes, and then season with salt and pepper.

Add the olive oil to the bowl and mix until well combined.

Taste and adjust the seasoning; if needed, add more salt, pepper, and/or chilli flakes. (Tip: for a thinner consistency, add more olive oil.)

Drizzle the salsa verde over braaied lamb chops and enjoy with pap and iBhisto (tomato and onion relish) for a delicious summer feast.
