Smoky Sweet Potato Salad

Try this Smoky Sweet Potato Salad, using B-well Reduced Oil Mayonnaise, to kick off your flavourful summer!

Serves: 4 | Difficulty: Easy | Prep Time: 10 minutes | Cook Time: 20 minutes

Ingredients

3 large sweet potatoes, peeled and cubed
1 C (250 ml) B-well Reduced Oil Mayonnaise
½ medium-sized lemon, juiced
½ tsp (2.5 ml) cayenne pepper
½ tsp (2.5 ml) smoked paprika
salt and black pepper, to taste

½ red onion, finely chopped
a handful of coriander, chopped (save extra coriander for garnishing)

Method

Bring a large pot of water to a boil, add the sweet potato cubes and cook until soft to the touch. Remove from the stove, drain water and set aside to cool completely.

To make the dressing, add the mayonnaise, lemon juice, cayenne pepper, and smoked paprika into a mixing bowl. Mix to combine; add salt and pepper and mix.

Add the sweet potato to the bowl and gently toss through the dressing to coat it.

Finally, add the red onion and the coriander, and gently mix together until well combined.

Arrange it on a platter or in a salad bowl. Before serving, garnish it with extra coriander.
