Easter Spice Glazed Pork Shoulder with Crackling Shards
This Easter pork shoulder roast is filled with spice and everything nice. What we love about this recipe is that it highlights ‘traditional’ flavours you’d expect around this time of year, taking inspiration the ultimate Easter treat — the hot cross bun. We’ve used a combination of mixed spices, which perfectly complement the succulent pork.
Slow-cooked to perfection the pork shoulder becomes deliciously tender, allowing you to pick and pull all your favourite parts!
Because we know that crackling is always in high demand, we’ve removed the skin off the roast and crackled it to perfection separately. You can ask your friendly butcher to do this step for you; even better, ask for an extra piece of skin to roast – extra crackling never goes amiss!
Roasting it separately gives you a lot of control during the cooking process and simplifies things, as you don’t have to consider the meat at the same time. Also, because the layer of skin lies flat in the oven versus being wrapped around the roast, it tends to crackle more evenly – it’s a win-win.
Those gorgeously crackled shards, served alongside the tender glazed pork shoulder, make this Easter recipe a textual delight.
Removing the skin layer prior to cooking, also gives the opportunity to add more flavour to the shoulder with a glaze, much like you would with a Christmas gammon (this is sounding better and better, right?) We’ve used orange juice, Dijon mustard and sweetness from brown sugar to add a beautiful hint of caramel.
This one needs a little bit more time and lovin’ in the oven to get that pulled pork texture but we promise, it’s absolutely worth it!
